  • Yum, sounds great! I have a question about the coconut ginger rice. Is ginger in one of the single packets of flavoring? Ginger bothers me (as does curry, which I think has ginger in it?). I think I'm allergic to it, but I get a horrible headache if I eat too much. I'd try that rice if I could leave out the ginger.
  • The ginger is, I suspect, in one of the packets. The rice is plain jasmine rice, I'm pretty sure. And I don't know what the green herb is but that can't be ginger. One of the packets has powdered coconut milk in it. I guess the last packet has ginger (and other spices).

    You could try just getting jasmine rice, and then mixing in half water and half light coconut milk. They suggest using a half-half split if you want to make the rice more coconutty, which I've done before.

    A Taste of Thai also makes some Garlic Basil Coconut Rice, which I've not tried. I don't see any ginger in the ingredients list. I pretty much like all their foods, though.

    Oh, and one more vegetarian menu day for those looking for ideas...

    Breakfast
    Cheerios with 1% milk and a sliced banana
    A container of Yoplait light yogurt

    Lunch
    Falafel sandwich -- I was lazy and used Fantastic Food's falafel mix, it was adequate, and fried up two falafels in a teaspoon of olive oil, then stuffed it in half a medium pita with sauce (below) and lettuce and tomato
    For the sauce, I mixed tahini and lemon juice and nonfat plain yogurt and a bit of garlic
    I also used the sauce on some grilled eggplant brushed with olive oil

    Snack
    McDonald's fruit and yogurt parfait (man I love these things!)

    Dinner
    Small portion of angel hair pasta with some homemade chunky tomato sauce and a bit of feta cheese
    A sweet baby greens salad with just tomatoes in it, and lowfat raspberry vinegarette dressing

    And... I have a Dove dark chocolate bar with my name on it this evening.
