Nice things to do with cottage cheese

  • I tried mixing cottage cheese with sweet chillie sauce today. It was a complete experiment which could have gone badly wrong but as it happened I loved it. I'd recommend it to anyone lol. oh and only 29 calories per spoonful of the sauce too so still low calorie

    I would normally leave it in the bottom of the fridge with the aubergine (I must've bought 10 in my lifetime and never actually cooked one!)

  • When I make the cottage cheese/oatmeal/egg white pancake, I use 1/3 (US) cup of the cottage cheese and the oatmeal, and 3 egg whites (which conveniently measures 1/3 cup). Then I blend them well, usually with my hand held "stick" blender, and cook in a non-stick pan. I often thin the batter with water as I like thinner, less cake-like pancakes, and then it makes 2 or 3 regular sized ones. Top with fruit and devour. :lol

    I forgot about the aubergine dip as well. Bake a whole aubergine in the oven until its gone very wrinkly then take it out and let it cool down a little and scoop out the insides. At the same time using Fry Light fry half a finely chopped onion, a finely chopped chilli and a couple of cloves of garlic and add in one heaped teaspoon of ground cumin - cook until soft. Add the onion mixture to the aubergine puree and mix/beat together then add in a cup of cottage cheese and beat some more. Season to taste.
  • You guys are very amusing, some of you Love it others hate it. But I love it with fruit. I get a cup of cottage cheese and dump a fruit cup over it. Its awesome. Makes my husband gag though!LOL
  • I don't like it with lumps in it - I use a Braun hand blender to whizz all the lumps out before I can eat it.
