For a big dessert I like to make a sundae out of the skinny cow icecream sandwiches. 1 icecream sandwich (2 pts), 2 TBSP chocolate sauce (1 pt), and a dollop of cool whip light (1pt).....oh my gosh....but I am so trying the eclair dessert, I have a recipe for the fat version that is too die for...so this should be good.
I think a good idea for dessert would what i made up as "Erika's Low Calorie Ice Cream Sundae"
You'll Need:
Low Calorie Vanilla Ice Cream
Can of Light Syrup Peaches
Special K Cereal
Sweet and Low Sugar
First get one scoop of Vanilla Ice Cream, get three slices of peaches, and Two Tablespoons of Special K mixed with one bag of sweet and low sugar.
Grab one bowl place the special K ice cream at the bottom, then place the one scoop of vanilla ice cream on top and roll it around a bit so the cereal stick to the ice cream....then place the peaches on the side...and enjoy a gourmet style low calorie ice cream!
I've gotta share, I made the eclair dessert for Valentine's day....It was SOOOO GOOD!!!! It will probably become a standard. Thanks for the suggestion!!!
And I want to thank DeafinlySmart for the graham cracker/lite cool whip suggestion. These are yummy! I made them tonight, but I used the chocolate grahams. Fantastic. You know what else would be great? Mix the cool whip with some sugar-free chocolate pudding and put that between the grahams.
Pour milk into medium bowl, add pudding mix. Beat with a wire whisk for 2 minutes or until well blended.
Spoon half of the pudding into 4 dessert glasses, cover with layer of banana slices, 1/2 cup of the whipped topping and remaining pudding. Top with remaining whipped topping.
Refridgerate until ready to serve.

Light Cool 'N' Easy Pie
2/3 cup boiling water
1pkg. (4 serving size) Jell-o brand sugar free low cal. gelatin, any flavor.
Ice Cubes
1/2 cup cold water
1 tub (8oz) Cool Whip Free
1 ready-to-use reduced fat graham cracker crumb crust (6oz or 9 inch)
Stir boiling water into dry gelatin mix in large bowl for atleast 2 min. until completly disolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
Add 2 cups of the whipped topping; stir with wire whisk until well blended. Refrigerate 10 to 15 min. or until mix is very thick and will mound. Spoon into crust. refrigerate 4 hours or until firm. Serve with the rest of the whipped topping ontop.
