Zucchini Puffs

  • I didn't care for these. They were soggy and too greasy. Maybe I cut them too thin (I have no idea what 1/4 of an inch looks like ) or had a different expectation in my mind. Here's what they looked like:

  • Halloween we all brought in treats at work. These were requested by my shift (I made them for them once before). I sliced up 3 zucchinis and had NONE left to take home.

    2 medium zucchini
    1/3 cup grated Parmesan cheese
    1/3 cup mayonnaise - not Miracle Whip
    1/2 teaspoon basil (you could also use garlic powder, lemon pepper, or other herbs/spices)

    Slice zucchini into 1/4" rounds. In a small bowl, combine remaining ingredients. Spread each slice with a thin layer of mayonnaise mixture.
    Broil for about 60 seconds or until tops are golden brown.
    Makes 36.
    Approximately 1/2 gram of carbohydrate each.
