    Ugh, best laid plans and all that. Spend most of the afternoon at the doctors so didn't get home for lunch and I was so glad I had thrown a Quest bar in the car. Moved my chef salad to dinner and added extra spinach to make up for not having veggies with lunch.
  • Breakfast: Pizza Quiche, lg hot tea with sweet'n'low - 3NC
    Lunch: 1 italian sausage cooked in marinara sauce, 6oz broccoli with butter - 10NC
    Snack: 1c bell pepper - 6NC
    Dinner: 2 egg omlette with bacon, cheese and picante sauce, 1/2c blueberres - 7NC
    TOTAL: 26 NC

    I'm adding in berries starting this week, but left my NC at 25 for now.

    As a note, Rao Marinara sauce is absolutely delicious, and has only 3nc per 1/2 cup compared to say Newman's Own that has 9nc.

    Artic Zero ice cream which has only 150 calories per pint, and just 5nc per 1/2c is absolutely disgusting. The is the first time that I actually spit ice cream out. So if you are looking for a low carb frozen treat don't eat this!

    Raw veggies, garlic olives and Special K granola ( not together lol)
    Roast chicken,peas,brown roll

    Snacks: banana, seet cinnamon and salt popcorn

  • I chickened out on adding berries. I think I'll stick with nuts for another two weeks. I really want to meet my next mini goal on time and who knows what berries will do!

    You can make your own low carb ice cream. This is also Induction friendly

  • Jersey ----- O M G!!!!

    I have been KILLING for ice cream (which is crazy b/c I'm not even much of an ice cream eater pre-Atkins). I am SOOOOOOOOOOOOOOOOO doing this!
  • Today I had:

    B: Bulletproof Coffee (YUM! And a great way to get more fats) with 2 eggs and 2 slices bacon (probably didn't need the actual food that early but we were going to the beach and I didn't want to be tempted to cheat).

    L: Tuna salad on cucumber "crackers" Just sliced cucumbers into rounds and ate them like crackers with the tuna. Surprisingly good.

    Snack: 1 slice aged cheddar cheese and 1 slice turkey meat

    D: Taco wraps. Homemade taco meat (made my own seasoning), sliced tomatoes and onions with a little homemade guac in lettuce cups.

    Snack: Probably some veggies with dip or a small salad. Hopefully tonight I will go to bed before I get hungry again!

    Missed the gym today but tomorrow I'm planning on hitting it hard with a couple hours at the pool with the kids after.

    •4 whole eggs (pastured of course)
    •4 yolks (in addition to the whole eggs above)
    •2 tsp vanilla
    •1 gram vitamin C (ascorbic acid) or 10 drops apple cider vinegar or lime juice to taste.
    •100 grams (7 tbs) grass-fed butter
    •100 grams (7tbs) coconut oil
    •50 grams (3tbs + 2tsp) MCT oil (important for consistency)
    •80 grams (5.5tbs) xylitol or erythritol (or more to taste) I am using liquid stevia with 0 carbs
    •~100 grams water or ice (just under 1/2 cup; add less than you think you need, then increase the amount).

    1.Blend everything but the water/ice in blender. It takes a while to get the butter blended into perfect creaminess.
    2.Add water or ice and blend some more until well blended. Ideally, you want a yogurt-like consistency for creamy ice cream, or add more water for a firmer, icier texture
    3.Pour the mixture into an ice cream maker and turn it on.

    D: Chicken stack --- rotissere chicken sauteed with onions, cheddar cheese melted on top with sour cream and salsa (or pizza sauce, etc)
    S: pepperoni

    Eh, wasn't the best eating day
  • I really really wanna go to the wine tasting festival so im gonna be good as I can!!!

    L: pork and 2 cups lettuce with MCT and vinegar dressing

    S: 1/2 avocado

    D: scampied shrimp with whipped cauliflower and cheese.

    gonna make the "get you some" ice cream tonight and see how that goes, hope its ok to eat I don't see how it could be bad with the ingredients.

    B: 2 scrambled eggs cooked in butter with cheese, 2 slices bologna (I know not the best meat, but bought it a week or so ago, and still using it up, was the only meat I could stomach eating then)
    L: crustless pizza in the skillet with pepperoni and a lilttle ranch
    D: Loaded cauliflower casserole and burgers on the grill
