  • I use the regular variety (it's all I've seen in shops) in any egg dish - I love them in egg "muffins". They're also great melted on top of spaghetti squash, or blended into fauxtatoes (steamed cauliflower puréed).
  • This sounds really.. really good.. I'm thinking about substituting plain greek yogurt for the cottage cheese
  • I've used them to make ranch salad dressing or dip, by adding ranch powder and a little milk or water. I also have used them to make a cheese sauce to put on steamed veggies. I use them in place of mayo sometimes.

    One can chicken breast
One wedge laughing cow (the bleu cheese would prob be best but I used the garlic and herb)
    1/4 c lf cottage cheese
    Hot sauce to taste

Microwave for about a minute and serve with celery sticks!

Hey asphyxia- you need to put this in the recipe section. It's so good! I saw it in the on plan thread and had to do a search to find the recipe here. I'm so glad I was able to find it, and I'd hate for it to disappear! It was just what I needed for lunch today, and I will def make it again! Thanks for sharing!
  • I agree...needs to be in the recipe section...it's so good!! I've made this so many times for get togethers and such...everyone loves it!!! I always bring celery to dip in it....and crackers for the folks who aren't "dieting"
  • I've noticed that there's actually a similar recipe in Snacks Phase I:

Someone posted a "creamed spinach" recipe when I first joined. Basically, it's just a wedge of LC stirred into some cooked spinach. Really tasty!
I just made this for lunch as a side dish and it's delicious! Fry up some fresh spinach in a saute pan, add a wedge, and presto!: delicious "creamed spinach!"
