  • Quote: I just bought a container of fresh salmon chunks from tj's and am wondering what to do with them besides put them in wraps. the chunks are maybe 1-2" big. thanks!
I'd marinate, put on skewers and grill or throw in the oven like others have mentioned.
  • Thanks for all the great ideas!

Here is my current, favorite recipe for salmon. It is simple and delicious. I serve it over brown rice (there's usually some tasty sauce to spoon over the rice) with a green vegetable.

    Maple-glazed salmon

    INGREDIENTS
    1/4 cup maple syrup
    2 tablespoons soy sauce
    1 clove garlic, minced
    1/4 teaspoon garlic salt
    1/8 teaspoon ground black pepper
    1 pound salmon

    DIRECTIONS
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
    Preheat oven to 400 degrees F (200 degrees C).
Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

  • @Platinum: Salmon and avocado sounds like a great combination. I'm going to try it in a salad soon!
  • Quote: You could make salmon skewers with onion and tomato and grill them. Or make soup! With veggies, potatoes and dill mmm for some reason it just tastes amazing in soup.
Quote: I put my salmon on the grill. In aluminium foil.
How do you grill things inside, especially on skewers??? Or do you mean bbq grilling?

Oh you can do it both ways. I usually bbq grill it.
Inside it is easy too, you just place the fish wrapped in foil in a oven resistant bowl...same thing, the heat is gonna do the job, because the alu foil allows an even cooking. No skewers.
  • Last weekend I let mine sit in lime juice, garlic and parsley. Then sauteed them in a bit of butter and olive oil until they were dark at the edges. It was delicious!
