Meatloaf Muffins

  • Quote: Some of my friends doing WW-at-home came up with this. It's based on a more time consuming recipe, but this goofy "shortcut" landed up being increadibly fast and really yummy.


    1 lb. of either extra lean (95% lean) ground beef OR 1 lb. ground turkey
    1 box Stove Top Stuffing - Herb Flavored
    1 C hot water

    Crunch up the stuffing, pour the water over, and mix well. Pack into 12 greased muffin cups. Bake at 400 F for 25-30 minutes.

    Makes 12 - only 2 points each!!!

    I top mine with a teaspoon or two of ketchup.
    OK, so part of my struggle with eating well is that I am a horrible cook.. sooo here's a silly question.. do u cook the beef first before mixing and baking?
  • I haven't made them yet but I am assuming you mix the meat raw with the stuffing and water and then cook them. I think I will try this this weekend! BUT I'll to figure out the points plus value (I think the 2 points was for the old program).
  • Those are not 2 points each! You need to calculate the correct points because the beef is not one point per ounce and the stuffing is certainly not one point. I don't like all that bread in my meatloaf.
