  • Thanks for all the great protein ideas everyone! Especially the idea of having the sauteed veggies pre-done so they're ready to go.

    I do buy the egg whites but thought they might be a bit bland on their own. And I love hardboiled eggs but I like to eat the whole egg so the calories can add up.

    I also love cottage cheese and didn't realize how popular it was for a protein source. The pancakes are interesting but I'll give them a try.

    I came back to add that I checked out the cottage cheese link (Thanks Nelie) and there were so many great ideas...but now I'm hungry!
  • Thank you guys! Unfortunately I'm allergic to eggs - I can have them *in* stuff if they're not too prominent, but omelettes, scrambled eggs, and egg-based dough products are out for me. But, I get a fair bit of milk, and I'll pick up some cottage cheese next time I'm at the store. That'll help. I'll check out quinoa; how do you cook quinoa anyway?

    I made these today for lunch. They were delicious! I think I like them even better than white flour pancakes due to the oatmeal flavor. I made a triple batch and am going to put the rest in the frig for breakfast. I took a sugar free syrup, cooked some blueberries in it and put it on top. Thanks for the recipe!

  • Is the cottage cheese low-fat, non-fat or regular? What kind of oatmeal are you using; the steel cut stuff? Do they get brown and smooth like pancakes when done? They sound very interesting and I love blueberries.

    I use low fat cottage cheese, large flaked oatmeal uncooked... and yes they are nice and smooth when done, make sure you blend them well...

    Quinoa (keen-wah) is a grain, rapidly gaining in popularity because it is high in protein and decent in fiber. I used to make my own breakfast cereals and throw quinoa in it for the protein and extra-love. I've never used it for much else though.

    Trader Joe's sells pure egg whites--no coloring, etc. There might be some sort of preservative in them, but that's it. I can't remember how expensive they were.
  • I buy the eggwhites in a carton too... I don't buy Eggbeaters because they are full of stuff that I can't pronounce... The eggwhites in cartons that I buy are pure pasterised eggwhites, you can eat it as is, but who would want to do that... Although I have added the pure eggwhites to shakes, you can't taste it at all but man, oh man, watchout for the gasssss, later on in the day TMI I know
  • Okay, now I'm confused. I have not yet tried the pancakes but thought about making them this weekend. Every recipe I've seen (even with slight variations) calls for "oatmeal", which I assumed meant that I had to cook up a batch of oatmeal (which is why I hadn't made them yet).

    Now Ilene, you said you used large flaked "oatmeal" but uncooked. If I see oatmeal, I think cooked...does everyone actually mean raw oats?? Or is it possible that some of you are using oats and some oatmeal?

  • My pancakes call for raw uncooked large or regular flaked oatmeal... most recipes that I've seen with oatmeal, unless specified, call for uncooked oatmeal...
  • Thanks Ilene. I guess I will continue to just be confused by people using "oatmeal" where I would use oats. Much easier if you don't have to cook up some oatmeal first, which is what I was about to do!!
