Last night I made an experimental batch of sugar free candied jalapenos (which I then blogged about). You can find the 2-3 ingredient recipe on my blog in the post titled Cheater Pickle Experiments.

The total cost for one jar was just under $1.35 (crazy cheap for a sugar-free pickle).

I want to try adjusting the sweetness/flavor profile by using different amounts and flavors of drink mix. I'd also like to dry it using different pickled veggies like dill pickles, pickled cherry peppers, pickled okra...
