Pesto Tilapia

  • I basically feel like I just invented the lightbulb. Pesto Tilapia is inexpensive and moderately low in calories for all those who are Calorie Counting. I had the tilapia in my freezer and mayo in the fridge. So the only thing I had to buy was the pesto. I used fatty ingredients because I just started CCing in December and I am trying to work through what I have in the house first. If you can find lower calorie mayo and pesto you can probably get this recipe under 300.

    Pesto Tilapia*

    3 tilapia fillets
    1/4 cup mayonnaise
    1/3 cup pesto sauce

    1. preheat oven to 400
    2. mix mayo and pesto in small bowl
    3. lay out fish on foil lined 9x13 glass baking dish, spread pesto on fish.
    4. bake for 20 minutes

Approximately 300 calories per serving. 3 servings. I served it with frozen mini-peas. Grand total of entire meal was 370 per serving.

Aaaaand this dish is toddler approved!

    Enjoy.

  • Sounds delish! I wonder how greek yogurt would taste as a substitute for the mayo.
  • very interesting. Unfortunately I'm not a mayo fan so I'm wondering about a good substitute as well.
  • I think plain low fat yogurt would be a good substitute for the mayo. It'll keep the sauce creamy without lots of calories.
