The hot pan makes them crispy - you don't really need the oil at all. I do use a drop of oil, but it works just fine without!

We pan fry in a mist of oil and use two corn tortillas (50 cals each), reduced fat cheese and plenty of veggies. I probably eat quesadillas twice a week or so.
