So yesterday I made some sushi for lunch and used cauliflower rice instead of real rice, shrimp, carrot, cucumber, avocado, and cream cheese. I make 3 rolls, which ended up being about 24 pieces....

Yesterday morning's upswing on the scale gave me a bit of pause, but I know it was because I'd had about 5 cups of veggies for dinner. Note to self: never skip lunch. I didn't let it bother me too...
