Beets?
 
I just bought some beets from my organic farmer friend, planning to make roast beets with sauteed beet greens. Wasn't really thinking, it's a once-a-year kind of meal. Anyway, it's listed under P1 foods to avoid, and I don't see it specifically mentioned in P2 food list.

One of the P2 recipes in the book uses beets ("Rumi Chopped Salad...") but I know there have been many revisions/clarifications etc.

any thoughts?

Go for it! Beets are very healthy and have just a few more calories than carrots. There are so many veggies that they are not all listed. The GFGC Guide says "limited" but I'm sure you are not eating them every day. (Can you tell I :love: beets? :lol: )

Another question, what is GFGC?

I thought since beets were specifically mentioned on the P1 list then they should be specifically mentioned on the P2 list :lol: I'm the only one in the family who likes them.

It's the Good Fats/Good Carbs Guide. Beet once in a while are not going to throw you for a loop. Carrots have been added to the food list and I'm sure beets will not be far behind. They ARE in a recipe.

My pal Jane who is a MOD on here makes Harvard Beets with Splenda. I must get her recipe and post it.

Did you every try chiogga beets? Red and white stripes! Just lovely!

I'm glad nobody in your family likes beets - more for us! :lol:
