Default A Substitute For Heavy Cream?

I found a Recipe for "mac n Cheese" made with cauliflower. It was on low carb and loving it or indeed Have some fat with your fat!
It calls for 1 cup of heavy cream
what the heck can I sub for that?

Maybe evaporated skim milk (comes in the cans in baking aisle of grocery)?

Great suggestion, MT!

KO, try either 1% or even 2% milk. That should do the trick. You can check out Cooking Light's section where they lighten a reader's recipe. It gives you lots of ideas on how to deal with issues like this.
