Hints on making Ricotta Creme tasty??

  • Ok - I tried this and the first one was YUK! Vanilla flavored, cheese curd... not for me! So, I pureed it in my mini-chopper and added cocoa. I still can feel the grainy-ness to the ricotta (which I don't mind in savory dishes, but this dessert one doesn't work for me!)

    I'll go skim the recipes, but I just don't like this so far at all! I'm chilling my chocolate one to see if it changes, and I might add cool whip to it.

  • Christy, I don't know what to tell you. You're not the first to complain of the "grittiness" of the ricotta.
    I don't know if you can "get over it" if you don't like it.
    Have you looked for another brand? We buy one that's fairly smooth... I THINK it's from Saputo.
  • I add egg white (from the carton) to mine and really zap it in the little processor.
  • i ground up some nuts (almonds or macademia) and blended that into the ricotta with a wee bit of milk. added some vanilla flavouring too. definately my favourite version.
  • I would think that adding ground up nuts would make it grittier rather than smoother.
