low fat cheese

this might not be a new question but:
The SB books use many differant kinds of cheeses in their recipes but they dont always say low fat? Does it have to be low fat?
I can only find part-skim motzerella and low fat cheddar at my local supermarket, does anyone know if they make a low fat montery jack or low fat swiss???? I have found reduced fat feta in the past but I havent seen it around lately?? Im so sick of eating motzerella on everything :jeno: ....any ideas?????? :?: thanks!!

They do mean low fat cheese in all the recipes. Up here in the Great White North, I can get reduced fat provolone, Swiss and feta in the bigger stores. They are usually found in the deli section and are store-packaged. Ask around. Perhaps some of the USA chicks can give you brand names.

I've not had alot of lucking finding low fat cheeses either - I can't even find the Laughing Cow Lite anymore since it seems everyone is doing SB.

I buy the Kraft 2% cheeses. I often buy Swiss, Cheddar, Mozzarella, and a Colby/ Monteray Jack mixture. I think they may have others. They have shredded as well as slices in Swiss.

Thanks!

Black Diamond has a fat free mozzarella .... i am assuming this is okay?!

Any fat free or reduced fat cheese is OK - just don't overdo it as calories still count and cheese is high.

Do you have a Trader Joe's near you? They carry a lot of different varieties of low fat and fat free cheeses and they aren't so expensive.

The nice thing about cheese is that it last a long time if you wrap it well. So when you do finally find some you can stock up. Most will freeze with little effect on flavor, sometimes it does mess up the texture some but most of the time we are melting it on or in something.

I've found Kraft 2% in the bricks and shredded in the regular cheese area. If your store doens't carry it you could talk to the dairy manager or store manager and ask them to stock it. I was finally able to get some sugar free syrups at one of my local stores because 1 other person asked about it so they decided that it was in demand.

Good luck!

The just opened a Trader Joe's here in Burlington, MA -- much more convenient than heading down to Arlington! I knew it was a great source for frozen veggies and fish, but it didn't occur to me to go there for low-fat dairy choices. Thanks for the pointer!

Cabot has a lot of really good 2% cheeses, as does cracker barrel.

The Daily Dish (great free e-zine from the SBD online) had an article about this recently. Dr. A advises that you should stick with cheeses that have 6g of fat or less per serving.

Part skim mozzarella (shredded and in string cheese form) should be very easy to find. I love the Kraft 2% cheese, in sliced and in shredded form, and both were easy to find both on the West Coast and here in the middle of nowhere, NY. Hopefully you can find them by you, too.

I love Cabot's cheeses, especially the red-fat cheddar. :T
