For me the key is variety. I look at every recipe that fits SBD and copy ones I want to try. There are many at 3FC and other sites like
http://groups.msn.com/SouthBeachDiet. 3FC is my favorite site and the only one I participate in for posts. So far! For veggies there are chili recipes that contain tomatoes, egg muffin and egg quiche recipes that have them, etc. Don't forget all the beans like chickpeas, kidney beans, etc. I know someone who hates cauliflower but ate it in a fake mashed potato recipe. I don't see how the kids would be deprived. Had my mom used SBD when I was a kid, I wouldn't have had to detox from sugars and other bad carbs, so to speak.
