Just starting

  • My husband has agreed to start SBD with me, but I am concerned with finding things that he will eat. He doesn't like salad dressings of any kind, he tolorates lettuce, likes celery and mushrooms. And that is it for veggies. Do you have any suggestions of how to add veggies into his meal plans in order to set him up for success? I am also very scared to start myself. I don't want to set myself up for failure either. I have 2 small children and am concerned they might get deprived themselves.
  • For me the key is variety. I look at every recipe that fits SBD and copy ones I want to try. There are many at 3FC and other sites like http://groups.msn.com/SouthBeachDiet. 3FC is my favorite site and the only one I participate in for posts. So far! For veggies there are chili recipes that contain tomatoes, egg muffin and egg quiche recipes that have them, etc. Don't forget all the beans like chickpeas, kidney beans, etc. I know someone who hates cauliflower but ate it in a fake mashed potato recipe. I don't see how the kids would be deprived. Had my mom used SBD when I was a kid, I wouldn't have had to detox from sugars and other bad carbs, so to speak.

    I have two children, and I give them the South Beach meal we're having plus a few extras like carrots, a baked potato, a roll, etc.
  • Hi. My husband pretty much hates veges too (and honestly I'm not too fond of most of them myself), except he will eat a plain lettuce salad with a few cukes in it. So I've had to be tricky and hide the veges, more or less. For example, I made a meat loaf the other day and I used half lean ground beef and half very very finely chopped mushrooms. The mushrooms have a meaty texture and they were chopped so fine (in a mini food processor) that he never knew the difference. I also added green peppers to the meat loaf, and although he could see those he didn't object to them.

    There is a recipe on this forum for stuffed beef rolls. It's basically deli beef stuffed with cheese, with zuchinni on the side. I chopped up the zuchinni real fine again and just added it to the cheese stuffing mix, and he never knew the difference. Same with the chili I made last night........I loaded it with finely chopped veges and he didn't know what he was eating and it helped to thicken the chili as well. I realize that these finely chopped cooked veges are no substitute for whole, raw veges but hey, I figure it's better than nothing.

    Also, is there any kind of veges he likes? My hubby likes kale and collard greens, and string beans too so I make a big pot of them on Sunday and then give them to him all week. And although he hates spinach, if I mix it in with some cheese (see the recipe for stuffed pork chops) he'll eat it even if he does grumble about it a bit.

    Thank you for the welcome and helpful tips. Today the fridge and cupboards get cleaned out and I prepare to begin fist thing tomorrow. I am very nervous but excited to have come across this site. I know I will be using it for my support and safety net. Thank you.
