Default Coconut milk?

Hello! I am new to this website and have found so much information! Does anyone know if coconut milk is allowed on phase 1?

Not allowed. Perhaps you can use skim milk with coconut extract.

Coconut milk has a decent amount of fat in it (not the good kind, sadly), so if you substitute, try putting in a little oil (if it'll mix) or maybe a little Smart Balance (or other trans-fat-free margarine) to make up the difference. Or Fat Free half-n-half?

I use coconut milk sparingly in P2, though. Haven't checked to make sure that's kosher... Hope so! (off to check...)
