Orange and Avocado Salad w/ Main Dish additions

  • Found this simple side salad on EatingWell.com. A few additions make it a great Main Dish Summer salad:
    Serves 4

    8 cups mixed salad greens
    1 cup orange segments
    1 avocado, diced
    1/4 cup slivered red onion
    1/2 cup Cilantro-Lime Vinaigrette, (recipe in separate post)

    My additions:
    1 Cup Small White Beans
    Grilled Shrimp, seasoned with your favorite southwest seasoning. You could also substitute Scallops, or any white fish you like to eat on a salad!

    The beans give the salad "staying power" and actually, really add to the texture of the dish.
