Chinese Chicken Salad

  • Mixed Greens
    2 grape tomatoes sliced
    2 button mushrooms sliced
    1/2 can chinese vegetables drained
    4 oz canned chicken drained or grilled chicken breast chopped

    Oriental Dressing (this makes about 2-3 servings of dressing)
    6 Tablespoons Splenda
    3 Tablespoons Vinegar (rice wine is nice if you have it but white vinegar works well too)
    8 teaspoons lowfat or ff mayo
    2 Tablespoons Dijon mustard
    1/4 teaspoon oil

    mix well


    Lay mixed green on plate, spread chinese veggies over top of green, then tomatoes, mushrooms and canned chicken pieces. Sprinkle dressing on top
  • This serves one but note that the dressing is for 2-3 servings so save at least half for the next salad.
