Sweet Potato Crinkles
Nutritional Analysis: One serving equals: 95 calories, 6g fat, 99mg sodium, 9g carbohydrate, 1.5g fiber, and .5g protein
Serves: 4 Ingredients 1 large sweet potato, washed and peeled 2 Tablespoons coconut oil, melted Salt Ground cinnamon Allspice 1. Preheat the oven to 400 degrees F. Lightly grease a baking sheet with coconut oil. 2. Using your Mandolin Slicer with the crinkle cut blade, slice the entire sweet potato at the thinnest setting. 3. In a medium bowl toss the sweet potato slices with coconut oil and season with salt, cinnamon and allspice. 4. Spread the slices over the prepared baking sheet and bake for 15 minutes, or until cooked through and slightly crunchy. |
I'm going to try this! I love sweet potatoes, but not the sugary ones typically served on Thanksgiving.
