Delicious spinach stuffed tomatoes
I made some AMAZING stuffed tomatoes for dinner last night. :) The filling was so creamy, flavorful, and smelled wonderful. Here's the recipe!
Preheat Oven to 350 Take 5 tomatoes. Cut one end off of each, Scoop out all of the insides. (I used the insides in a side salad). Filling: Half a bag of frozen, chopped spinach, Half or part of a bag of frozen chopped onions, 1 1/2- 2 cloves of garlic minced, 1 1/2 cups of Fage 0 % Greek Yogurt. (You can add more or less of these ingredients depending on your preference. You could also use fresh ingredients too. The important thing is that there's enough veggies mixed with the yogurt to combine the flavors and turn a slight green color.) Heat a skillet on medium high. Toss in the spinach a little before the onions and garlic to warm it up, Toss in onions, Toss in garlic, Stir until spinach is soft and onions translucent, Remove the veggies from the skillet, and put them in a bowl. Combine Veggies with Yogurt. Stir until it turns a greenish color, Taste to make sure the flavors are combined well. :) Next, pile the filling into each tomato. Put the tomatoes on a lightly sprayed pizza pan, Place the pan in the oven for 10-15 minutes depending on how hot it gets. The tomatoes should be warmed all the way through when you take them out. I ate mine with a green salad, but they would go excellent with steak or fish. I'm going to make the filling for my squash pasta Sunday for a church dinner. :) (I hope none of this was confusing. This is my first recipe, and I don't really measure when I cook, because everything is experimental.) |

Neat. It works very, very well for a pasta "sauce" too. Nobody at the church dinner really touched it (they're more of a pork-barbecue, casserole, fried chicken kind of crowd), but my mother, husband, and I really put the leftovers away. So, thankfully, none of it went to waste!
