I work for a vet, so I know how great it is when things work out.
Get them a gift certificate they can apply to a lunch out/delivered in, or deliver the card with a fruit basket or meat and cheese basket or something like that. I'd love to get one of those fancy fruit baskets that looks life a big ole flower basket, but is fruit on a stick that looks like a fancy flower basket.
Snacks are always welcome, since breaks and lunch hours are often interrupted with emergencies. So getting to eat is often an issue.
If you don't want to do food, make a donation to a local animal shelter in their name, put a thank you in the local paper, nominate them for some kind of community hero, tickets to a local event.
Spend a bit more time with them and find out a bit more about them, then you could send something they would like, maybe a gift cert for x amount towards a round of golf, or a round of drinks somewhere.
The possibilities are endless, and really, most anything will be gladly accepted. Heck, just call and take orders from your local fancy coffee shop and deliver preferred coffee, latte, etc., along with the card.
My oldest son calls once in awhile on a Sat and asks us what kind of coffee and donut or whatever we want, he gets it and brings it down and hangs out.
It's cool just to get someone to bring a cup of coffee and a bagel.
