Scallops w/ Pasta and Cream Sauce
Just tried this recipe - substituting fat free 1/2 & 1/2 for cream -and it was just wonderful and super easy to prepare. Hope I'm getting the points right...
Serves 2 - points are for one serving Points: 12 for entree alone Bay (small) Scallops 6 oz (equals 3/4 lb) 1/2 portion = 1.5 pts 1/2 onion minced - 0 2 tbl parsley - 0 16 tbl or 1/2 c of Fat free 1/2 & 1/2 - 3 pts / srvg 2 tbl - Brandy - .5 :cool: 2 tspl Worsteshire 1 tsp sea salt (I used reg salt) 2 tbl of butter - 3 pts per person dash or two of pepper 11 Almond's worth of slivered ones - toasted - 2 pts total = 1 pt / srvg Angel Hair Pasta 3 cups worth (I had only 1 c) = 3 pts / srvg Rinse scallops and papertowel dry - put to side. Mince or grate all required ingredients - ditto Saute minced onion in butter until glazed... add brandy simmer 1 min... stir in cream... add toasted almonds...parsley... 1/2 of salt and pepper and Worstishire... simmer 1 min Season scallops with rest of salt and add into mix cook 1 - 2 min - really that's all - serve immediately over pasta and side dish of veggies. Pasta should be cooked to be ready and waiting for scallop dish I sauteed zuchinii and yellow squash with 2 tsp of butter and garlic salt pepper and basil seperately. 1 pt / srvg It was delish! I know the points may seem high, but the sauce would be 2 - 3 times the points in a restaurant dish. Hope you like it. let me know :^: :^: :^: Patch |
