looking for low point veggie "white" lasagne

  • Hi again Linda...

I was checking out the latest recipes from my local Weight Watchers website and they had a white lasagna recipe on there. Maybe that will work for your daughter.

    Three-Cheese Lasagna Divan

The secret to getting a cheesy lasagna for only 5 POINTS lies in the reduced-fat cheese. This cheese melts really well and only has 1 POINT per slice.

2 cups frozen diced cooked chicken breast (such as Tyson)
    1 cup fat-free cottage cheese
    ¼ cup grated Parmesan cheese
    ¼ cup egg substitute
    ¼ cup chopped onion
    ¼ teaspoon garlic powder
1 (10 ¾-ounce) can condensed 98%-fat-free cream of mushroom soup, undiluted
1 (10-ounce) package frozen chopped broccoli, thawed and drained
    Cooking spray
9 cooked lasagna noodles, cooked without salt or fat
9 (¾ - ounce) slices reduced-fat processed American cheese (such as Kraft 2% singles), cut into small pieces
    ½ teaspoon paprika
    Preheat oven to 350º
Combine first 8 ingredients in a medium bowl. Spread one-fourth of chicken mixture in bottom of an 11 x 7-inch baking dish coated with cooking spray. Arrange 3 noodles over chicken mixture. Top with one-fourth of chicken mixture, one-third of American cheese, and 3 noodles. Repeat layers, ending with American cheese. Sprinkle with paprika.
Cover and bake at 350º for 40 minutes or until thoroughly heated. Remove from oven; uncover and let stand 5 minutes before serving.
