    1 cup onion -- chopped
    1 cup green bell pepper -- chopped
    28 ounces tomatoes, canned -- cut up
    4 ounces mushroom pieces -- drained
    2 teaspoons dried oregano
    1 pound ground turkey
    16 ounces spaghetti, cooked -- drained
    2 cups shredded nonfat cheddar cheese
    10 3/4 ounces condensed reduced fat cream of mushroom
    soup -- undiluted
    1/4 cup water
    1/4 cup fat-free Parmesan cheese

    In a large skillet, saute onion and green pepper in cooking spray until tender. Add tomatoes, mushrooms, and oregano. Add ground turkey. Simmer uncovered for 10 minutes. Place half of the spaghetti in a 13 x 9 in baking dish that has been sprayed with cooking spray. Top with half of the vegatable mixture. Sprinkle with 1 cup of cheddar cheese. Repeat layers. Mix the soup and water until smooth; pour over the casserole. Bake, uncovered, at 350 for 30-35 minutes or until heated through.
