I looooooove love love salmon. In fact I'm crazy about fish and seafood in general. Name some yummy ways you fix your salmon, I could use some new ideas. And thanks for all the ideas on the strawberries! ;) |
I made blackened salmon last night and it is super easy. First, I heated a cast iron skillet on the stove on high for 10 minutes. I had a nice, wild-caught piece of Copper river salmon. I rubbed it with olive oil and cajun seasoning on both sides. I threw it in the pan and cooked it for about 4 minutes each side. Squeezed a tiny bit of lemon juice on it - delicious and easy!

I love salmon! We usually just broil it with lemons and onions on top. Occasionally, I'll put some butter and lemon juice in the food processor with fresh dill and blend it together. Then put it on the salmon after it's broiled. We also like it grilled. I can't wait to hear all of the suggestions for salmon!

I've got this one recipe you all might like. It's simply wonderful.
Glazed Salmon 1/4 cup reduced sodium (lite) soy sauce 2 tablespoons brown sugar 1/4 tsp. crushed red pepper flakes (optional depending on how spicy you like your fish) 1/4 tsp. ground ginger 1/8 tsp sesame oil 1 salmon fillet (1-1/2 pounds) Grill or broil salmon 4-6 minutes on each side, basting with the glaze. 233 calories per fillet. I do something really simple... I take Salmon fillets and put them in a ziplock bag, put half a cup of Raspberry vinigerette dressing in the bag close it up and put it in the fridge for an hour, then take it out, put the fillets into a baking dish and discard the rest of the dressing away, and it's soooooo goood!!!!! Yummy!!!

For the marinade: juice of 1 large lemon---I also use some of the zest 1-2 tbsp lite soy sauce 1/4 cup white wine 2-4 tbsp dried dill or 1/4 cup fresh dill sprinkle of paprika on each filet I usually cut the filets to about 1 inch thickness I broil each side for about 5 minutes The paprika and dill really makes the salmon look gorgeous! The taste is even better! I've also made this without the white wine and it is still good! |
i like soy, honey, lime, and chili powder, or just simple lemon pepper maybe with a lemon dill sauce (you can get good marinades from the seafood department).

The very very best way is caught fresh, marinated in fresh lime juice and grilled over an open campifire. :D Considering that most of you don't have that option, grilling after using your marinade of choice is #1 in my book. I have a lot of home-canned salmon that I tend to use just like canned tuna. My DH loves it mixed with celery, onion, and mayo as a sandwich filling. I use it in casseroles, and make salmon cakes. A salmon quiche is really good too. And wild salmon is far superior to farmed stuff. :)

<sigh> I don't like salmon.
There are lots of wonderful recipes out there, especially the soy-ginger-lime marinade, but I'd rather have it on some other fish. I'll eat salmon if it's put in front of me, and I've tried buying it and cooking it myself, but I always feel as if I'm choking it down. I'm really more a flounder-turbot-Dover sole kind of person. |

Well, I just pulled the salmon out of the freezer!! :lol: I think I am going to have to try that glaze and the one with the red pepper flakes for sure!
I love salmon - YUM - I love blackened salmon and smoked salmon. :drool: There is a spice house in my home town that makes a seasoning called "Trinadad Lemon Garlic" and it is wonderful on salmon. I usually broil it, but I would love to grill it, too. |
