This Weeks Healthiest Food - CABBAGE

Well this is a favorite of mine. It's so filling and healthy and low cal.

I eat a ton of it every week. I make a red cabbage slaw that I munch on throughout the day. I even bring it to work with me. I shred the cabbage and add in shredded carrots (I buy these shredded already), lemon juice and splenda. I make a LOT at a time and it keeps well for a few days.

I also make a green cabbage health salad. I shred the cabbage, add thinly sliced red and green peppers, thinly sliced yellow and green zucchini, and shredded carrots. Dressing is salt, pepper and vinegar. I eat this a couple of times a week.

Now in the old days, there was stuffed cabbage - chop meat and rice and raisins in a red sauce. YUMMY. But my very favorite way - fried cabbage and onions with egg noodles. You can not imagine how good this is.

And how do you all feel about cabbage? Do tell. :)

I like cabbage as well and usually it is some kind of slaw. Although I liked it cooked as well. I haven't made it in a while though. The spicy cabbage soup recipe looks good though.

I love cabbage! Who knew!?!? I used to only eat cabbage in mayonnaise and sugar laden coleslaw. Now I eat it sauteed with parmesan cheese and almonds, as a pasta substitute in a comfort food casserole, cabbage rolls (with ground turkey), creole cabbage, and today for lunch I have cabbage soup (NOT the diet :)). So very filling and so few calories. PLUS it tastes good.

As I was reading Tammy's post, something popped out at me. Tammy, you said, who knew that you would like cabbage and then you wrote so many ways to use it. It really is amazing to me how when we try to use healthy foods just how many things there are to do with them. Elminating so much food (the junk, the processed stuff, the "bad carbs") has us really stretching our brains to find delicious, healthy substitutes. And we're doing it!!! Who knew? It's really cool!!!

It is cool isn't it! Thank goodness I'm not a picky eater. I like pretty much all foods. :D After all these years, I finally realized that I could use shreds of cabbage in the same way I used to use macaroni noodles or rice (well more or less, you know?) Before I started losing weight, I honestly don't think I had ever knowingly tried cabbage in any foods except coleslaw.

MMM, cabbage. I love it quickly cooked up in a pan with some chicken broth and plenty of salt and pepper...it is particularly good with pork loin.

Steamed is also good, but I like the flavor the chicken broth adds. I like to use Savoy cabbage for my slaws...I like the flavor of it better when raw, and it looks so pretty!

Love it. We just had cabbage last night for dinner :)

I love cabbage, too! I've discovered many different ways to prepare it since that fateful day when I was growing up and got caught trying to mail it to the starving children overseas.

I love stuffed cabbage. If you make it with ground turkey, it isn't all that fattening, is it?

I like to keep cabbage on hand at all times as my emergency back-up vegetable. Lots of onion and garlic "sauteed" in a non stick pan, a little lean protein, a bit of Dijon mustard, and heaps of shredded cabbage make a really satisfying stir-fry type one pot meal for me. Some carrot added in for color and contrast is nice too. For a slaw I like to use onion, cucumber, a little shredded carrot and alot of cabbage dressed with Dijon, malt vinegar and a little fish sauce. I took this with me to a Thanksgiving dinner that offered no OP food other than the turkey. I figured nobody else would touch it, but there was a couple following a South Beach style plan and they gobbled it up and were grateful to have the option.

I [heart] cabbage

Another cabbage lover here. I have it every day as part of the raw veggies that I eat with lunch; it I had enough lunch, I have a little, if I am still hungry, I have a lot. I just love it.

My DW shreds a small amount of red cabbage as a garnish on our regular salad at dinner. Really nice.

That all depends on the ground turkey you use. Read nutrition labels carefully. Some brands of ground turkey can have just as much, if not more, fat and calories than ground beef.
