Default This Week's Healthiest Food - Leeks

I don't believe I've ever cooked with these.

Has anyone else? And what do you do with them?

Hey! I've had leeks twice this week. They are great roasted. Leeks were on sale as were zucchini so I chopped up the leeks and the zucchini, mixed in a little olive oil, coarse salt and coarse pepper in a roasting pan and roasted them at 400 until they were done (20 mins?).

They were great

Yum!!!! Ooooh I have never had them like that Nelie! I use them in soup. You can basically use them anywhere you would use an onion but with milder flavor. Slice the white and about 2 inches into the green and discard the rest.

Especially good with sweet potato or winter squash .

One thing I forgot to mention is that you have to ensure you clean leeks well. Since they are layered and open on the top, dirt can get into the crevices. They are actually very easy to clean though, just separate out the outer layers and rinse well. After reading the whfoods snippet, I may need to go and buy more leeks

Yes - leeks are one of the only veggies that I find it easier to slice before washing. Just cut them, then drop them in a bowlful/sinkful of water and swish around with your hands. All of the grit/sand falls to the bottom.

I put leeks in every frittata I make, as well as in soups. Such a great, mild oniony flavor...mmm!

I mostly use leeks in soups and egg dishes. I don't think I've ever had them on their own, I'm not sure why not. I'm sure they'd be good that way. I'll have to try Nelie's roasting method, maybe with asparagus since I don't like zucchini.

Thanks for the suggestions, I'll have to try them sometime. I know I've had them in soups like from restaurants, but I've personally never cooked with them myself.

THey are on my shopping list! I dont know why I never thought of eating them any way other than soup.
