Breakfast Yummies
 
I just started the south beach diet and was previously on the atkins and this is what I eat for breakfast almost every day.

Egg Crepes:
3 eggs
1/4 cup fat free cottage cheese
1 tsp. vanilla extract
1 tsp. no calorie sugar substitute
1 tsp. cinnamon
Filling:
2 tbsp. cream cheese
1 tsp. cinnamon
1 packet sugar substitute

Put eggs, cottage cheese, vanilla, sugar sub, and cinnamon in a blender and blend until well blended. Spray a medium frying pan with cooking spray and place the mixture into the pan a tablespoon at a time. Cook on high heat. For the filling combine cream cheese, cinnamon, and sugar sub in a small bowl and mix until the cream cheese becomes creamy. Place the cream cheese mixture inside the egg crepe and roll together. Top with cinnamon and enjoy.

Cottage cheese surprise:
1 cup cottage cheese
1 tbsp. cinnamon
1 tsp. vanilla extract
1 packet sugar substitute

Combine cottage cheese, cinnamon, vanilla, and sugar. Top with a few chopped nuts and enjoy.

Something similar
 
For mornings when you want a sweet breakfast treat...

2 eggs
1 Tbsp Ricotta Cheese
1 Tbsp Cream Cheese (softened)
1 Tsp sweetener

Combine Ricotta & Cream Cheeses and the sweetener. Make a thin omelet out of the eggs. Spread cheese mixture around omelet & roll up.

I can't remember where I got the original recipe, but I know it called for 2 Tbsp's Cr. Cheese. The carb count on the Cr. Cheese seems to be much higher in Canada than elsewhere, so I exchanged 1 Tbsp of that for Ricotta. When you're trying to maintain induction level, every gram (or even 1/2 of) counts LOL. It's much creamier with the Cr. Cheese, but if you don't mind the texture of Ricotta this is nice too.

I was really hungry one day and tried this recipe with 3 eggs & YUCK. Now, I'm not an egg fan to begin with (which is why I need to disguise the taste of eggs LOL), but 3 eggs made the omelet too thick & too eggy tasting. Eggy taste & sweet cheese filling - not for me thanks :lol:.

When I'm craving something sweet I usually put some cottage cheese on a piece of whole wheat toast and sprinkle with splenda and cinnamon! I love it!
