Default Dijon Biscuits

Yes, I've had these several times. Hard to believe they are not wheat based! They are excellent. Sooo much better than those breads made with egg whites (yuck!). These biscuits have the same exact texture as bread made with white flour. I make chicken salad (4 oz. cooked chicken, 1 Tbsp. chopped celery, 1 tsp. chopped red onion, 1/2 Tbsp. mayo, 1/2 Tbsp. sour cream, 2 Tbsp. walnuts) and put some lettuce and a slice of tomato on the bottom bun; then I top with the chicken salad. Yum!

They store very well in your freezer.


Serves: 12 servings


Ingredients
•2 1/2 cups blanched almond flour (weigh it on a kitchen scale)
•1 tbsp finely chopped fresh thyme (I used parsley)
•½ tsp baking soda
•¼ tsp sea salt
•3 large eggs
•¼ cup whole grain dijon, mustard
•1 clove garlic, very finely chopped

1.Heat oven to 325 degrees F (160C).
2.Combine flour, salt, soda, and thyme in a medium bowl
3.In another smaller bowl combine eggs, garlic and mustard
4.Add dry to wet ingredients and mix
5.Scoop into 12 mounds and flatten very slightly. You want them to be approx. 1” high
6.Bake 20-22 mins in the center of the oven until very lightly browned
7.Store in a covered container in the fridge. Great buttered with eggs or split and toasted with grilled cheese.
