Oregon Blue Cheese Crumble

  • For all blue cheese lovers!

    8 oz blue cheese
    2 cloves garlic, mashed
    1/3 cup olive oil
    2 tablespoons red wine vinegar
    1 tablespoon lemon juice
    1/2 cup red onion, chopped
    1/2 cup minced fresh parsley
    finely ground pepper

    Sprinkle cheese in a shallow 6 to 8 inch dish. Mix together garlic and oil and drizzle over cheese. Combine remaining ingredients and pour over cheese. Chill one hour. Sprinkle with pepper. Serve with rye crackers, celery, or cut apple slices. Or just eat it by the spoonful

    This is nice for entertaining as regular folk can have it with thin slices of rustic bread or crackers and we can eat it with celery or apple.

    this looks pretty darn close to my dad's recipe that no one in the family could reproduce! I will give this a try this week!
