Summer Sauage

  • 2 1/2# grd beef
    1/8 c Morton's tender quick meat cure mix (in spice section at store)
    1 1/4 T mustard seed
    1 T garlic pwd
    1 1/4 T blk pepper
    1 1/2 t hickory salt--i couldn't find this so i used season salt
    1 1/2 t liq smoke--or less-i liked less
    1/2 pk zesty salad dressing mix

    combine all and mix until blended.Chill 3 days,stirring ocassionally.
    shape into 2 10" logs and place on a rack inside a "sided" baking pan to catch the juice.
    bake 225 for 5 hrs turning once
    cool completely on a wire rack
    store in refig or freeze

    great for snacking and good for taking on campouts or hiking.
