Ham and Egg "Cupcakes"-Breakfast
6 slices shaved ham
1/2 cup grated cheddar cheese 6 eggs 1 tablespoon cream 1/2 teaspoon salt 3/4 teaspoon pepper 3 sliced mushrooms Instructions Spray 6 cup muffin tin with Pam. Line each with 1 slice of shaved ham forming a cup. In a medium mixing bowl beat eggs with cream salt and pepper until frothy. Add mushrooms and cheese. Stir until blended then spoon 1/2 C of the egg mixture into each ham cup. Bake at 375 degrees for 20-25 min. or until eggs are puffed and set. Carbs: Recipe says bout 1g carb per "cupcake" |
Can you cook ahead and freeze these?

I wouldn't recommend that. I tried with one and it defrosted to a hard lump. Yuck
