Stuffed peppers
 

This could be an entree or a side dish

take a pepper, red, green ,yellow

cut in half lengthwise discard seed and stem microwave about 2 minutes or until tender

in bowl mix cream cheese, 1/4 tsp cilantro, a little garlic salt and parsley

fill pepper halves with cheese mixture sprinkle cheddar cheese over top microwave another minute or until cheese is bubbly.

I have also added shredded chicken to this.
