Hummus
 
I can't seem to find it in a store anywhere.
Does anyone know a SIMPLE recipe for it??? :D

Here's the one that I use... If you don't have Tahini paste you can skip it..

3 tablespoons plain fat-free yogurt
2 tablespoons water
1 tablespoon lemon juice
1 tablespoon tahini (sesame-seed paste)
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 cloves garlic, peeled
1 (15.5 ounce) can chickpeas (garbanzo beans), drained

Put all of it in a Food Processor and WHIZ IT till it's smooth...
I love it! I was gonna post it under Recipes... Let me know if you like it

I find the store hummus in the deli section usually by the premade salads, cheese wedges and stuff..

Can't find sesame paste. Any suggestions?
And can you sub minced garlic for the cloves??

It's okay to leave out the Tahini...it might taste not as good (I love Sesame!!) and yes Dahlink, you can use minced garlic... I do it when I dont have cloves

A quarter cup of commercially made hummus is 93 calories and 3 grams of fiber. As a snack that's about what I would eat.

Yeah, it says 2 tbsp on my hummus container is a serving, which i can stick to if i'm only having a small snack- like half a pepper.It's 40 cals.

Homemade Tahini
(Sesame Seed Paste)


While Tahini is readily available in health food stores, Middle Eastern groceries, and even most supermarkets today, it is also very easy to make your own.
4 cups sesame seeds
1/4 to 1/2 cup vegetable oil

Preheat the oven to 350° F.
Spread the sesame seeds on a shallow baking tray and bake, shaking frequently, until fragrant, 8 to 10 minutes. Do not brown. Cool.
Put the sesame seeds in a blender or food processor fitted with the metal blade. Add the vegetable oil. Process to a smooth paste, about 5 minutes. Add more oil if necessary, to bring the paste to a thick pouring consistency. Tahini will keep stored in a tightly covered jar in the refrigerator for several months.
Makes 3 cups.

Most hummus brands in the store are fine even for phase 1. Just look at the ingredient list. I use Athenos brand when I buy it. Some of their flavors have a small quantity of something we shouldn't have but I can't remember now what it is. I think the Greek and the Spicy Three pepper were the flavors I used to buy.

Where in the store do you usually find hummus? What area/ aisle?

(I was looking this evening, but had no idea where to look, I searched all over then realized I was in a very small store that prob. doesn't sell it.)

You can use peanut butter (or any other nut butter, really) in lieu of tahini.

Chickpeas
Garlic
Peanut Butter (or whatever)
Oil.

Enjoy your hummus ;)

You can find it near the deli.
I do believe that homemade is better, and healthier. ;)
