On-the-Go Veggies
I have a hard time eating my veggies plain (without covering them in Ranch dressing - and I refuse to use anything but the real deal). On regular days I stick with salads for lunch with Spritzers dressing and for supper I make something like asparagus, squash, steamed broccoli or bell pepper stir fry. However, I will be at the lake with friends all weekend and I need easy ways to get in my veggies. I will most likely be eating lunch on the boat with only a cooler to store food in and for supper I will probably just have a bun-less burger with lettuce as my veggie. What is something that has the convenience of carrots that I can pack up and take with me?

Will you have access to a microwave? I use Ziplock's Zip 'n' Steam bags all the time.

Snow peas, celery, cherry tomatoes, green bell peppers, green onions, the think long cucumbers that don't need to be peeled (think relish tray) Also, if you are grilling, you can take along some aluminum foil and cook any veggie you like. Just place the veggie inside the foil with a little water and it will steam. You could you some lemon or I can't believe it's not butter spray along with any herbs you like. Zucchini and yellow squash are very good this way and you would not have to keep them "cool". Green beens, broccoil and asaparagus are also great on the grill.
You can do this iand enjoy more than just "lettuce" it just takes a little planning. Mariah |
