I have to share my dinner tonight. I made a stuffed pepper but didn't use any HNS.

I used 4oz buffalo with McCormick's 30% less salt taco seasoning, 1/4 cup quinoa, 2 oz raw tomatoes, mixed up and all stuffed into a 3 oz cooked green pepper.

The quinoa was a great addition to this recipe. I don't really care for the tomato basil HNS so it was nice to have this recipe without any HNS.

The rest of the day was pretty boring so not worth sharing. Hope everyone is enjoying this journey!

I get the extra firm tofu in the hard plastic containers that's packed in water in the produce section. It comes in different brands.

Not sure if this would fall into anyone's plan but it worked for pre-conditioning.. it's actually an old boy/girl scout camp fire thing.

Lean hamburger meat (you could use turkey or bison)
Any aproved veggie (I used celery, zucchini and summer squash)
Seasonings (I used Mrs. Dash)

Preheat oven to 350. Get a cookie sheet and depending on how much stuff you want to bake, use a piece of foil that will be long enough to wrap around everything. Lay the foil down on the cookie sheet, then your patty, then cut up your veggies and spread them on top & around.. don't forget to add seasonings. Bring edges of foil together and pinch closed across the top and on the sides. Bake for 45min - 1hr (depending on how well you want your patty & veggies cooked).

If you have a family or you want to make left overs, you can use a 13x9 baking dish, use PAM to coat the dish, make your patties, throw your veggies in, cover with foil and bake. Usually I turn the temp up to 400 in this case just because it's more to cook.

Here's what I had today:

Breakfast
Raspberry HNS

1 slice 40 calorie bread

Snack
1 fried chicken wing

Lunch
Wildberry HNS
baked chicken
green beans
cantaloupe

Dinner

Snack
Hot cocoa HNS with Walden Farms caramel dip

Not bad, but all not good either. Accountability means being honest.

Mandiana..
Nice to see your vegetarian menu. I take a full day of vegetarian every once in awhile. I was given the vegetarian diet from the center so I could do this. Nice to meet you.
