Veggies...
 
Anybody have any great ideas/tips for sprucing up my veggies? I'm on the blue menu right now so when it comes to my cooked veggies I'm finding that they are pretty bland. I put a little Mrs. Dash on them tonight and I used a little ICBINB on them too. Any other ideas?

I love fresh lemon juice on mine. I guess its a Greek thing but its so refreshing and good for you.

I like red pepper and sea salt on my veggies too. Depending on the veggie, I may put black pepper as well. It's not very inventive, but those are my staples.

I like to cook my veggies in a tiny bit of olive oil, with lemon juice and minced garlic, garnished with some sea salt.

I roast almost all of my veggies in the oven. I think it makes them so much better. Lay a single layer of veggies on baking sheet (my favs are asparagus, brussels sprouts, or green beans) and spray with pam or drizzle with 2t olive oil. Sprinkle with sea salt or other spices. Roast at 400 on top rack until they start to brown, stirring every 5 min or so. I could eat this as dinner all by itself.

Sea salt is fantastic, and a little bit goes a long way because it is so finely ground.

I LOVE a little bit of vinegar on my veggies. Its the same idea as the lemon juice...but a little acid will make them taste completely different. Also try grilling them. I don't know if you have a George Forman or grill pan, but my green peppers, green beans, asparagus, and squash taste SO good after being grilled.
