Back to Basics Challenge

  • I stated on another thread that our center used to have a class that was called Back to Basics. Of course they went over all the rules and food options....knowing that you can only have cheese at 1 meal in a day so if you have it at breakfast don't add it to lunch or supper sort of thing....but the best part of that class was the challenge that we got and here it is!

    I challenge you to plan one full week of meals now for next week.
    ***You can only have the same thing 2 times. So if you make extra french toast for breakfast you can have it later but only 1 time.
    ***You have to plan 1 meal that your whole family can eat.

    This challenge will get you thinking.....make it easier to premake food and remotivate you by giving you options so you are not bored. Post your ideas here! Lets have many week menu options so we can all have boredom busters!
  • Monday
    Breakfast - Wrap-ini One low cal tortilla wrapped around 1 egg and 1 oz cheese; grilled on george forman to look "panini-esc) and HNS
    Lunch - Taco Buffalo Meat stuffed Green pepper and HNS with Frozen fruit smoothy
    Afternoon -- Have HNS following workout
    Supper - Turkey Meatballs with Orange HNS/ginger and red pepper sauce served over spaghetti squash (kids love this too so this is a family meal)

    Tuesday
    Breakfast Smoothy made with Cottage Cheese, Mixed Berry HNS and 1/8 c dry Oatmeal (add water to thickness desired)
    Lunch - Bake Chicken Breast on Sunday before the week starts so it is in the fridge.....use in a salad with a small apple and HNS
    Afternoon -- HNS to add time so I can eat with family
    Supper - Jalapeno Buffalo Burgers served with Green beans and a slice of toast. Kids will have Sweet Potato Fries added as a side to make family meal

    Wednesday
    Breakfast - 2 Hardboiled eggs (made on Sunday in the fridge) and a slice of Cinnamon/Splenda toast with HNS
    Lunch -- Tuna made with "smoothed" cottage cheese and veggies into a salad, celery for dunking into the tuna salad and a orange smoothy made with HNS
    Afternoon -- HNS after workout
    Supper -- Slow cooker "roast" Chicken using the Sweet Chicken Wing Seasoning in the recipe section.....roast veggies (I include tatos and sweet tatos for the kids but I only eat the veggies), slice of toast

    Thursday
    Breakfast - Egg Wrapini with HNS
    Lunch - Cheeseburger Soup (no starch) with fruit and HNS smoothy
    Afternoon -- HNS to add time so I can eat with family
    Supper -- Salsa Chicken on Brown rice for the kids.....served over salad for me. Black beans in salsa for the starch

    Friday
    Breakfast -- Breakfast Pizza made on a low cal tortilla with egg, cheese and 1 tsp of la vicoria salsa as "pizza sauce" served with HNS
    Lunch -- other chicken breast made on sunday with steamed garlic green beans and small apple and HNS
    Afternoon - HNS following workout
    Supper - Taco Chilli made with turkey burger.....served in bread bowls for the kids....just the yummy chilli for me

    Saturday
    Breakfast -- French toast --make 2 slices (1 for Sunday) with orange HNS
    Lunch -- Unwich from Jimmy JOhns with orange and HNS
    Afternoon -- HNS after family workout/outting/fun time
    Supper -- Slow Cooker Pork tenderloin and veggie mix 2oz, side salad with melba toast "croutons" and MRC ranch

    Sunday
    Breakfast -- French toasts and HNS
    Lunch -- Cod, steamed veggies and Frozen fruit HNS smoothy
    Afternoon -- HNS to add time
    Supper -- ??? I will have to think and come back to this


    I try to make supper time family friendly so I am not making too many meals

    Do you use the Jennie-O ground turkey? I've never bought any...
  • I don't like the flavor of Jenn-o.....I buy the 96% FF bulk turkey burger from Sam's Club. It is way less expensive than beef and to be honest we like it better. I had started by mixing 1/4 turkey with 3/4 beef....then 1/2 and 1/2 until we now rarely even buy beef. I did get some a couple weeks ago when I was entertaining company and was worried that the company wouldn't like the turkey, but my boys complained that I got too much oil in the pan when I cooked! LOL I won't be catering to company any more. My kids were upset to I made some extra meat my way and the guests liked it better! Lesson Learned.

    Just try the chilli and the turkey burgers too. Turkey burgers are so good. If you add diced jalepeno and green pepper and chicken Mrs. Dash it is an excellent Jalepeno burger! everyone gobbles it up.
  • I dont like Jennie-O either. Not a fan of any of their "processed" turkey meats either (hot dogs, bacon, etc). Bought it for the kid and hubby...they didn't eat it, so i tried a bite...yeah not good. You know a hotdog is bad when a toddler won't eat it! We go with Oscar Mayer's turkey hotdogs for the boys now and usually butterball ground turkey or cutlets. If you've never cooked turkey cutlets...they're great for when you want a "steak" kind of feel. They're YUM!
  • Thanks Jewelie and Hvnly! I really appreciate the tips! Sounds like I have another item to add to the shopping list. Maybe it's a good thing I need to buy some more bread! I will definitely be trying the ground turkey this weekend. I'm so tired of chicken, I made some last night, then promptly put it in the freezer and made some eggs for dinner!
