Lunch Ideas
 
I am having a really hard time with lunch since I can't have starch at lunch - seems like the only thing I can have is salad...what are your ideas?

Just for curiosity sake are you going to the MRC in Bellevue or Omaha. Just started the one in Omaha.

Have you tried the MRC coleslaw in the cookbook (page 61 old one). I like it to "change it up" as a different type of salad. I also like soups on p. 39(combination soup) and 42 (tomato cream soup).

I usually have a salad with the Dijonnaise dressing from the cookbook, some cheese or a hard-boiled egg and some fruit...sometimes I just have a big pile of fresh raw veggies with the MRC Ranch dip and some fruit...half a can of tuna with the MRC Mayo and some Mrs. Dash...I'm pretty boring for lunch - I don't want to have to think too much about it when making it in the morning.

I have cottage cheese with blueberries or pineapple. I cook my vegetables the night before, then just heat in the microwave.

I cook a chicken breast on the George Forman grill, in a skillet sauté cabbage, green pepper, green onion, and celery until tender. Then I add the chicken bullion HNS with 2 oz of water, add a dash of cayenne pepper, shred the chicken and add to the veggie mixture and simmer for a minute or so. This is my favorite.

I also make the broccoli and cheese soup and the chili.

i cover chicken breasts in mustard and then bake them in the oven and eat them with extra mustard. Then i slice up a bunch of cucumbers on a mandolin and snack on them during lunch. So i'm pretty much, chicken + cucumbers + a clementine.

Lunch is the hardest, I think. Especially for work. I bake several chicken breasts once a week, then take 4 oz of that. Either that or cottage cheese. Plus I love the combination of radishes and cauliflower (raw). Then add fruit and I'm good to go.

I love the chili too.. It's good when it's cold out. I'm pretty boring when it comes to lunch too.. I make chicken breast on Sunday for a few days a week. Then I will make Tilapia and shread it like tuna. Mix it with a little MRC mayo. or just do tuna. A few days a week I'll have cheese for lunch. Cucumbers are my veggie of choice at lunch. They are easy and don't require any cooking. If I'm running short, I'll pick up a couple of side salads from Wendy's and use spritzer dressing.

I wish I like cottage cheese. It seems so easy, but I just can't eat it. I think it's the lumps.. LOL.. I don't mind it in stuff but just can't do it plain.

I like to take sliced turkey and roll it up w/ some mustard. I can't stand eating a full 8 oz of raw veggies, so i'll take some steamed green beans or broccoli along with me

I was going to suggest cottage cheese like many of the others. My bf is also on this plan and hates the lumpiness of cottage cheese, so, I blend it in my magic bullet for him. Our favorite Dish for lunch is blended cottage cheese with fruit, 3/4 lunch of strawberries for example, two splenda packets, and a package of the vanilla pudding HNS. It's almost like cheesecake.

We also like the lasagna recipe from the cookbook. There's two, but, the one I make is without the tomato HNS, it uses tomatoes instead and zucchini for the "noodle." It sounds bizarre, but, is really good.

I'm not a big lettuce fan, so, I made a fresh salad of raw tomatoes, cucumbers, and green pepper. I use Waldon Farms Italian dressing on it. It's one of my favorite things.

Oh, and one last thing, the lady at our center in Lincoln does a cooking class once a week. She has designed some recipes herself that are program friendly. One of them is chicken salad, it's grilled chicken with MRC mayo, half an apple, some cranberries, and raw veggies like green onion and celery. You get a huge helping, it's very filling.
