Mock Banana Bread

1/4 cup Oatmeal
1 Vanilla Cream Pudding HNS
1T (or 2 packets) Splenda
1 dash Cinnamon
1 egg
1 t Vanilla Extract
1 t Banana Extract
1/2 t Xanthum Gum (this is optional but makes it more bread like)

Put all ingredients together and blend really well. I like to put in the Magic Bullet. You can make this in the smallest bread pan and eat 1/2 or make it into mini muffins. Bake in preheated oven 350 F for 35 min (muffins about 20-25 min)

This is 2 servings because of the amount of oatmeal. It counts for all of your bread. 2 oz of your protein. So if you are having it for breakfast add protein as a side. It is also 1/2 of your creamy HNS for the day.

Another I think you may like
Christina's Cream Puffs

Puffs:
2 egg whites
1 t xanthum gum
2 oz water
2 T splenda (2 packets)
1 pkt. double choc pudding/ Vanilla cream pudding/ or Lemon Chiffon Pudding
Blend all together in blender

Cream:
1 pkg Vanilla Cream Pudding HNS
2 tsp Vanilla, Butter and Nut extract
Mix with enough water for a smooth consistensy

Heat over to 350F
Spray mini cupcake pan with Pam. Fill tray with Puff mix.
Bake for about 25 min

Let puffs cool then fill with the cream.

Counts as 2 creamies! so you can eat half and save half for another day

I get it at King Soopers in the specialty baking supplies. It is like $11 but lasts a REALLY LONG time and makes any of the puddings more bread like.

Thank you Jewelie! I made the family real banana bread and I've had a craving for it too! I'm so excited now that I have this recipe.

I'm so glad you liked it.
You can add the Xanthum gum to the lemon poppy seed muffins (1 tsp) and it will be more bread like too

I've seen it at both Albertsons and King Soopers. You could ask someone to help you. It comes in a bag.
