Here is a little bit of taste for ya!

In a non-stick frying pan pour some salsa (chunky is the best). Leave it to reduce so that most of the liquid is gone, add your egg whites. Simple but delicious and nutritious.

Chopping up vegetables and then baking them with some egg white, cheese and spices is also pretty simple. But I did more of that during the winter... don't really like heating up my kitchen this time of year.

Sounds good!! But I need the yolks for protein and to keep me feeling nourished. Think I'd like some beans on the side!

I found this regarding egg nutrition:

The white of a large egg, or about 1-1/4 ounces, has 16 calories, 3 g of protein, 2 mg of calcium, 4 mg of phosphorus, 55 mg of sodium, 45 mg of potassium, the weensiest little bit of riboflavin, and no fat, cholesterol, or carbohydrates.

The yolk of that egg weighs about 2/3 of an ounce, and has 59 calories, 3 g of protein, 5 g of fat (2 of which are saturated), 212 mg of cholesterol, 23 mg of calcium, 81 mg of phosphorus, 7 mg of sodium, 16 mg of potassium, very small amounts of iron, thiamin, and riboflavin, and no carbohydrates.


Depending on how many eggs you eat that can add up to quite a bit of fat. I know of a lot of people who will eat 3- 4 egg whites and one whole egg a day.

I found this recipe as well, I have to try this one!

I have just come up with a great "pretend pancake" recipe which helps me to not get bored.
5 egg whites
1 yolk
splenda to taste.
1/2 teaspoon baking soda
1 teaspoon whole wheat flour (or enough to thicken it slightly).
Cinnamon powder.

Beat the ingredients, allow to sit for a couple of minutes for the baking soda to react.
Cook like a pancake.

Serve with sugar free syrup if desired.

I haven't eaten breakfast for 18 months or so but when I eat eggs I am going to enjoy them and eat the whole egg.

Regardless - nice tip on the salsa. I'll give it a try. With eggs. :D

I posted the salsa tip on my facebook and had a friend reply "to make them even better add the yolks and fry in butter..." :)
