Lean and Green Recipes That Can Be Frozen?
I would like to cook some healthy casseroles and other dishes that can be frozen on New Year's Day, so I start off the new year with healthy dinner options already prepared! *Are there any lean and green recipes that can be frozen?

I'm sure you could freeze prepared turkey meatloaf. I like to stuff it with frozen chopped spinach, thawed and wrung out. I freeze leftover soups and stews all the time, but I don't usually freeze prepared meals that aren't cooked.

Try the Taco Bake recipe. I'm able to freeze the eight portions it makes in foil and it still tastes as fresh as when it was first made. Recipe: Crust: 1/2c RF soft cream cheese, 1/4c egg beaters, 5tbsp FF half & half, 1/2 tsp taco seas.= beat the cream cheese & eggs til smooth, add cream and taco seas, grease 9x13 pan, spread 8oz of shredded RF mexican cheese blend over bottom of pan, pour egg mix over evenly. Bake 375 deg. for 25-30 mins. Let stand 5 mins. before adding topping. Topping: Brown 25oz ground turkey (93% FF), drain fat, add 4 tsp taco seas, 1 c tomato puree, 4oz chop green chilies, spread over crust, top with 4oz mex cheese blend. Reduce over to 350 deg and bake 20 mins. This recipe makes 8 servings which =: 1 lean, 3 condiments and 1/2 green per serving. I hope this is helpful:stir:

I found stir gets a great option and they freeze good. I make mine with bokchoy, cabbage, small amount of onion , garlic, zuccinni, broccolli and chicken(boneless skinless) Cook the chicken (chunked up) then and your cut up veggies. Mix a small amount of water and chicken bullion together and pour it in and cover with lid. Stir every few minutes until veggies are just tender ( it will cook more when you reheat it) Then I portion mine up and seal a meal it and stick it in the freezer then to reheat you lay the bag flat make a small cut ontop to vent microwave and done!!

Cauliflower Pizza:
1c grated raw Cauliflower 1/4c egg beaters 1/2c low fat shredded mexican cheese pinch dried basil mix in a bowl Preheat oven to 425 spray parchment paper with pam and place on a cookie sheet Form cauliflower mix into a circle (not to thick) about the size of the inside of a dinner plate. BAKE 25m gently use spatula to flip and bake 15 more minutes COOL Puree fresh diced, no added sugar tomatos Place several TBS on "crust" Top with 1/4c low fat shredded mozzerella cheese and veggie of choice (I use sliced portabellos, red peppers and spinach) Remove from parchment paper and place on cookie sheet. Broil 5m ENJOY! I usually make 3-4 pizza out of one head of Cauliflower and freeze them individually in gallon ziplock freezer bags. to reheat 425 for 15m SOOOOO GOOOD. My go to lean and green on the weekends! |

I have quite a few recipes on my blog (under the Recipes tab) that I will make and then freeze the extra portions. So nice to just nuke them for dinner on a busy day.
