Pork Rinds?

are pork rinds a safe low carb snack?

I feel like they are. I personally use them from time to time as a snack when I want something that's really crunchy :) On Atkins specifically, high fat is important and there is a goodly amount of protein in them as well. Just make sure you find a brand with zero carbs in it (some brands have added carbs in the flavoring process).

These definitely are a YMMV (your mileage may vary) item. While they are permitted, they contain a good deal of sodium & therefore may cause you to retain water.

I love pork rinds or cracklin! When I'm feeling froggy, I dip a pork rind in some sour cream and my eyes roll back in my head! Yum!!
