Cheese Carbs
 
Do you count the carbs in cheese? Have seen cheeses listed as 0-2 carbs and wanted to know what you all think of using these? I was thinking of the broccoli recipe with cheese, but it uses 3/4 lb of american cheese and I know that one slice of the american cheese I bought has 2 carbs.

If your following atkins, yes you should count the carbs. Dr. Atkins suggests you eat only a few oz a day. I remember because of bathroom reasons, I was only eating 1 oz a day (and not to mention the calories).

Remember the harder the cheese the less carbs (for the most part).

i buy the blocks of very sharp cheddar for omelets. <1g carbs per serving and sooo yummy.

Yes, you definitely should be counting the carbs for cheese. You are only permitted 4 oz of cheese on Atkins Induction...and that only includes certain types of cheeses...American is not one of them.

Cheese
You can consume three to four ounces daily of the following full-fat, firm, soft and semisoft aged cheeses*, including:
cheddar
cow, sheep and goat cheese
cream cheese
Gouda
mozzarella
Roquefort and other blue cheeses
Swiss

*All cheeses have some carbohydrate content. The quantity you eat should be governed by that knowledge. The rule of thumb is to count 1 ounce of cheese as equivalent to 1 gram of carbohydrate. Note that cottage cheese, farmer’s cheese and other fresh cheeses are not permitted during Induction. No "diet" cheese, cheese spreads or whey cheeses are permitted. Individuals with known yeast symptoms, dairy allergy or cheese intolerance must avoid cheese. Imitation cheese products are not allowed, except for soy or rice cheese—but check the carbohydrate content.
