low carb/high fiber food?
does anyone know of any type of food that is low in carbs but high in fiber? I really like Kashi cereal but it is a little too high in carbs for me, any suggestions from you wonderful minds? Thanks! :)

Non starchy veggies...and lots of 'em!

Spinach.
brussels okra many people also take fiber caplets for the bulk. I do it mostly in veges. I will take some whole grain crackers but they are to much for the carbs I try to limit to. |

Try dipping celery in blue cheese or Ranch salad dressing. You can also stuff it with cream cheese or peanut butter. yummy! Jennifer |
Hello fellow lo-carbers
I found a few high-fiber, low carb crackers out there. The best of these -- 6 grams carbs, all of which are fiber is called FIBERRICH. Its an imported cracker from Norway. You can find it online from several sources -- its about $3.50 a box with a dozen 2"x3.5 crackers. I used them as the sandwich bread for eggs and turkey bacon...sometimes for cheese and crackers...sometimes to go along with my salad. They taste as you'd expect -- like nondescript cardboard. But I wasn't eating them for the "taste", I was eating them for the fiber and they serve that purpose nicely. I used to eat various mediocre tasting high-fiber cereals (10g+ of fiber per serving), but the overall carb count even after subtracting fiber for any cereal is absurd. So, I'm a fiberrich fan. One was from Whole Foods in NYC, but unfortunately I don't have the name of the cracker. If I recall correctly, it was something like 5g of carbs and 4g of fiber. I thought it was the Whole Foods house brand, but apparently it wasn't. I have not been able to find it in Los Angeles. The last option is more dangerous -- and its probably available at various grocery stores. Its called FINN CRISP. Its 11g of total carbs, 3g fiber making it 8g "active" carbs -- for 3 crackers that are 1.5x5" long. They taste very good. Personally, I don't think going for taste is worth it...but its a personal choice. Hope this helps. Tzazu |
