LCFS Week of Nov. 2nd
Hello there!
Hope you guys are having a good weekend. We've been having unseasonable temps. Yesterday it was in the 70's. Today it's about 20 deg. cooler...so back to reality. We had a lot of excitement here in the wee hrs. of the morning on Sun. A drunk driver took down a telephone pole just around the corner from our street, left his vehicle, and ran. Lacee wanted to go out around 2:00 am and when we woke up we noticed that our power was out. DH took the dog out armed with a flashlight. He saw a lot of flashing lights through the trees, then saw one of our police cruisers coming down our street and you could tell he was searching for someone. Then a little while later he came back out. A few minutes later, another cruiser went down our street, we could tell this wasn't one of our cruisers because our PD drives SUVs. We figured it was either a State Trooper or someone from a neighboring town. We got our power back around 5:00 am. One of the roads leading to the development where we live (we have 2) is totally blocked off. The power co. has been out there about 12 hrs. working. There are wires everywhere. The last time we looked, the cable and telephone repairmen were there along with a fire truck and the police. They did catch the guy, but don't know what happened to him. Luckily nobody was hurt or killed. I think the guy is in deep doo-doo. nikki, your coats sound really lovely. You seemed to have gotten them fast. Usually it takes forever for something to come. I also love the smell of leather. Your recipe for the taco meat sounds delicious. I copied it and plan on making it some night. I made Suzanne's egg crepes earlier and I will make her lasagna with them. DH & I both love that dish. :T I am planning on making her cheeseburger pie for supper. Well, you did have a bit of excitment, Aleka. Glad your power is back on and that no one was hurt. That will probably cost that guy a lot. We are having a very boring weekend here. DH is working and sleeping, it's raining and suppose to rain for the next week, possibly. It's also rather cold. I have cleaned the house and am just looking for something to do. I'm still teaching DD to drive and we will go out this afternoon to do that. I asked her to set some goals for herself so she can see how far she's come. She is a good driver and is doing well. Still needs to practice parking and backing up and just needs to feel more comfortable over all. The last 2 coats I bid on went for more than my maximum bid, so I'm out of the woods. Need to get one for DD #2 still, and have a bid in on one for her, then that is it for awhile. It's nerve racking, but I sure love to get a good bargain. I've never made the egg crepes before, they seem hard. Does it take a little practice? Take it easy and have a good weekend you guys. Hope things are going well for you Anne, Nikki |

Our neighbors came down for a visit yesterday afternoon and we were discussing the accident. He told us that he heard that whatever happened also destroyed part of the road too. We noticed that there was a tarp covering some of the road where they were stringing wires. DH went out after our neighbors left and the wires were back up, but the pavers were there doing the road. They were paving in the dark. When we went to bed around 9:00 pm, we could still hear the machines. DH & I will take a walk later today to see if we can see anything. nikki, how did the driving lesson go? Sorry you were outbid on that coat. Good luck to you on the other coat. Making the crepes is easy. It does take some practice to flip them over and not have them all mooshed. The first two came out that way, but I don't care because it's going into the casserole dish for lasagna and it'll come out all mooshed up anyway. I have realized that if I let it cook a bit longer, and the top is almost set, I don't have as much of a problem turning it over. I use a soup ladle to put them in the frying pan. DH doesn't like a lot of her recipes I make, but he does like the lasagna. I didn't make the cheeseburger pie last night because our neighbors left around 6:00 pm. ANNE, how was your weekend? You would not believe the rain we have had these last days. It is not suppose to let up until Wednesday. This is my first day back at work after a week off but I honestly don't mind working when its like this outside:) Aleka, that was quite abit of excitement you had!! Drinking and driving:no: always a bad idea. Thank God no one was injured. Nikkic, those recipes look wonderful. I will make the cauliflower this week! I am on the fence thinking about getting the flu shot. We have a big campaign going at the moment and I can't decide what to do. I always wonder if this shot makes you more vulnerable to gettting sick:?: at least for the first couple of weeks following the needle. Have a great day all. Anne. |

It is raining here still too. This morning, they said that if it had been snow, we would have 20 inches, but it's rained all day, so it would be more now. Of course, the basement has a small stream running through it. Nothing is on the floor to get wet, so it's just water running through to the sewer. Someday, we hope to have that problem fixed. Thanks, Aleka for telling me how to make the crepes, I've wanted to for a long time, but figured they would turn out like scrambled eggs. The driving lessons are going very well. I hope winter doesn't scare her into waiting until next summer. It scares me driving in the winter sometimes too. Anne, I've been thinking about the flu shot too. I know that it is suppose to be safe, but I still have to wonder. They say that it will make it easier to tell if you have SARS if you've already had the flu shot and then get flu like symptoms. What a comforting thought. There is a new spray you can inhale that is like the flu shot, but the side effects and precautions are so many, I would not even think of taking that. I have been on a roll today. I put a slipcover that I"ve had in the basement for 2 years, on the couch. The couch was destroyed by one of the cats (shredded). It changed the whole room. I went to a discount store and bought a new throw rug for in front of it and new pillows. Then I removed all the clutter from the living room, put in the new stuff and it looks a whole lot better. Nikkic, I will probably wait a couple of weeks then go ahead and have the shot. I keep thinking about my dad and figuring if it saves me from giving something to him......... Anne, I think that's a good idea, getting the shot. DH got his last week and he really wants me to get one. I will, I've had them before and I'm not against them, just that nasal spray flu stuff. I've not tried the low carb pizza yet. I made some homemade Atkins bread the other day and it was not very good. I did try a new kind of low carb chocolate bar from Walmart and it was as good if not better than Herseys. It also gave me really, really bad gas. Even the cats wouldn't set on my lap. I guess the 3 of us are having the same type of weather....rain. Our ground is saturated, there are puddles everywhere. Luckily our basement or garage aren't flooded. It doesn't look like the weather will change very much in our area this week. One good thing, at least it's not snow.;) ANNE, that is awful about your basement. We've had that problem a couple of times, so I know what you're going through. Hope you don't have anymore problems. That's a good idea about you getting your flu shot. DH & I don't get one, and we've been very lucky..."knock-on-wood". I haven't tried the low carb pizza either. I have made Suzanne's using cream cheese that I like, but DH doesn't like it. What brand is it? Let us know how it is when you try it. nikki, what was the low carb chocolate that you got? Malitol does that to me if I eat too much of it. One time I had bought some s/f jelly beans and ate quite a lot of them. BAAAAD MISTAKE!!!:lol: I have been eating the De-Lite ones and enjoying them. I try to have 1 every other day or so. When I make the crepes, I mix the eggs as if I was going to scramble them, except I don't add any liquid to them (when I have scrambled eggs, I usually add some water) then get a ladle and pour it into the pan. I use PAM instead of butter to grease the pan, only because I want to watch my saturated fats. We had the lasagna last night.:T I hate driving in the winter too. Luckily it's not often that I have to travel too far. When I do, I'm in a panic until I get home. My car is all wheel drive so it makes it a little easier to get around in the snow. Have a great day. Aleka, I don't remember the brand of bar that it was, I'll have to see the next time I shop. I ate 2 of them, since I had no lunch and had no time to stop to get any. Probably one won't be so bad.
I've always added milk to my scrambled eggs, now, I add cream or sour cream. I won't add any to the crepes. Aleka, are people in your area upset about what's going on with the Episcopal Church? I see reports about it every morning on the news. Seems like there are more important things to be concerned about, but I'm not in the middle of it either. Anne, the stores have been getting Christmas decorations in for the last month here. The shopping channels keep running Christmas programs too. I do my shopping all year so I can get done by this time. The problem is, I keep seeing more stuff I'd like to get. It's hard to resist. I end up getting too much stuff for the girls. They have never complained though:lol: |

I had the flu shot last week and I'm sick this week. Not all that good, but my dh got really sick on saturday and is still in bed while I got sick yesterday and while I don't feel great, I'm back at work today and feeling better. So I got sick, but it could have been worse! Also, I happened to try making low carb pizza over the weekend. I used CarbSense garlic & herb pizza crust mix. It's really easy to make and instead of making two 12" pizzas, I made one 18" pizza and used the leftover dough for garlic cheese breadsticks. The breadsticks were ok, but the pizza was great! I rolled the crust out pretty thin and baked the crust alone before adding toppings and putting it back in the oven. Even my carb-eatin' husband liked it. At only 4 grams a slice (that includes sauce and toppings) it was devine. :D |
nikki, the only info. I have about the Episcopal Church is what I see on the news. Some people seem to accept it and a lot of people are upset about it and think he should step down. I am quite surprised that this all has come from NH because this is a very conservative state, where "liberal" is a dirty word.:) I honestly don't know anyone who does go to the Episcopal Church, as most of my friends are either Catholic, like me, or Protestant.

I think you and I were posting at about the same time. It's very nice to meet you. I'm glad you popped in to post. The pizza crust sounds great. Where would you get CarbSense? At a Whole Foods Market? I don't recall seeing it at our Natural Food Section in our grocery store. Sorry you and your DH are sick. That happened to my late father one year. He got a flu shot and got the flu anyway. Hope you both are feeling better soon.

Hi Aleka - nice to meet you. I have decided that I live in low carb heaven. There are low carb specialty stores pretty much within 10 minutes of any place you are in the Portland-metro area. If I can't find one, all of the grocery stores have low carb sections. I bought the pizza crust mix at Albertsons (it was $6, but worth every penny!) Check out www.carbsense.com they have a retail locator so you can find what stores near you carry their products or where you can order it online. :)

Hi StarPrincess, nice to meet you too! I found CarbSense Pizza mix at our GNC, but didn't buy it. I'm so glad you posted about it, I've wanted to know about it. I tried LowCarb Success Hot Cereal, Butter pecan flavor and it wasn't so good. It's so expensive trying to find low carb products that are good. Some are great, some really bad. I like most of Atkins muffins. The Banana nut, blueberry and orange cranberry are great. I bought but haven't tried the corn muffins yet. I don't normally eat corn, but thought I'd try it for dressing this year for Thanksgiving. I miss having cornbread dressing, it's my favorite part of Thanksgiving. At least it is a good alternative.

It has gotten rather chilly. I guess that cold front has finally gotten here. :( After it stopped raining yesterday afternoon DH & I put stakes in a few driveways along our street so that when he and our neighbor plow they know where the culverts are. It was so raw out that my hands were so cold that they hurt.
StarPrincess, I clicked onto the link you posted and found a Low Carb Heaven about an hour drive south of us. I live in the boonies where I travel 10 miles just to do groceries. Living in the woods has it's advantages and disadvatages. Next time I am down that way I will stop in. I will definitely look for that mix. Have you tried the Keto pasta? I have seen it advertised in a magazine and was thinking of buying some. You are doing great with your weight loss. I have been thinking of possibly trying Atkins, a friend of mine went to the Dr. recently and he suggested that she go on it. I would like to do it with her, but I know I would get sick of eggs every morning. Would you give me an example or examples of what you eat for breakfast? Thanks, I would appreciate it. I do have the book, Atkins for Life, but don't have his New Diet Revolution. nikki, that's a good idea about using the cornbread mix for stuffing. I love Bells instant stuffing, but I know that's a no-no:nono: DH doesn't care for stuffing so I know I'd end up eating the whole thing, not in one sitting though. :D I plan on making Suzanne's stuffing this year. DH and I will have to go to southern Missiouri (7 hour drive one way) on Friday. One of his favorite cousins passed away, she was only 2 days older than he is. She had a brain anurisym. It was a big shock. We have no idea how much time we have and it isn't always as long as we think. I may not go if his father goes with him. We will see this morning. It got into the 20's last night here. It is getting colder and darker all the time. I threw out my tomato plants yesterday. They just weren't getting enough light. I bought more lights, wrapped aluminum foil around their cages to reflect more light and still, they weren't doing well. Oh well, it was something I"ve always wanted to try. Wish I had a green house, but that would cost a fortune to maintain in the winter. I made some sugarfree fudge last night. While it was good, the recipe needs some tweaking. It didn't set up very well. If I ever get it right, I'll post the recipe. Better get going, have lots to do, Nikki |

I send my deepest sympathy to you and your DH. What an awful thing to happen especially now when the holiday season is getting close. I'm sure it must be hard on your DH where they are the same age. Aleka - I've tried a few kinds of low carb pasta and think it's disgusting. The texture makes me think of dried worms. :p I don't know about the low carb store near-ish to you, but the low carb stores in my area always have samples of different products available. It's great because it helps prevent me from wasting tons of money on things I won't like. As for atkins, I love it. The weight is coming off pretty quickly and I feel really good - lots of positive energy. I recognize that it's not for everyone, but for the people that do follow it as it was intended, it's been a great gift. :D As for breakfast, I hate eggs - always have. So I have things like string cheese, bacon, sausage, low carb french-toast or pancakes, or whatever else sounds good that morning. I spend a decent amount of time collecting low carb recipes and as a result, have never enjoyed such a variety of good food in my life. :) |

Thanks for the kind thoughts. I didn't know her well, we met a few times at other funerals. Seems that is the only time the family gets together anymore. It sure made DH think about his own mortality and that he needs to take better care of himself. It will be a long trip. His father is going and so am I. While I like his dad, he is difficult to get along with, and that's putting it mildly. DH wants me to go, so I will go for him. StarPrincess, you are so lucky that they provide samples. I tried the Darielle low carb pasta and your right, it is aweful. Even when it's covered with spicey sauce, it still tastes bad. I'd rather have sauce over zucchini noodles or french cut green beans. I think I'll get the new Atkins book to take along on the trip and brush up on the diet. I need to follow some plan to get to where I want to be and it may as well be something I like. I wouldn't recommend eating the pancakes on the first two weeks of induction, and I'd also stay away from the atkins brand pancakes. There are better versions out there.
As for the french toast, there's a recipe that uses crushed pork rinds, cream, eggs, and cinnamon, that I'm told is to die for. Again, not good for those first 2 weeks, but for later on. Please, explain zucchini noodles to me! |
Star (is it ok to call you Star for short?) Suzanne Somers has a recipe for "Zucchini Noodles" which are basically zucchini cut into long thin strips like noodles and stirfried in oil. You use this in place of noodles. It isn't that bad, zucchini is so bland.
Where is the recipe for the french toast? I'd like to try it someday. I spent a lot of time at Suzannes website last night, copying off recipes. If you've never been there, it's www.suzannesomers.com first page click on community, second page click on discussion. This will take you to the forum, scroll down to somersize recipes, there are several forums for a variety of recipes from the members. Some are not appropriate for Atkins, but most are. StarPrincess, I have a julienne vegetable peeler to make long thin strips that look like spaghetti. I peel down to the seeds. I also use yellow squash, we call it summer squash, just to add some color. Add your own pasta sauce and it really is delicious. Thanks for the recipe for french toast.

nikki, did you get much sleep? I would be running around in a tizzy trying to get things done before leaving. The Atkins for Life is the book I have. It doesn't explain induction in detail. It does have a lot of recipes and what I like, it gives you different meal plans for different levels of carbs.

I didn't feel it though, I told the nurse thats the advantage of having fat arms:) Aleka the rain finally stopped but its a tad nippy outside. I too have Atkins for life, its a good book. Don't read the first paragraph if your squeemish. I've been up all night, but it was because of TOM and excessive bleeding. I feel like I've given a few pints of blood to the Red Cross. I've had to wash rugs and floors all night because of it. I don't know how I'm going to go down there like this. I will try to explain it to DH, but he's already in a whirlwind of panic and emotion as it is. I know it's probably because of menopause, wonderful thing that it is. I have Dr. Atkins New Diet Revolution and his New Diet Cookbook. They are from last year, so probably not so new now. The Diet Revolution gives a better explaination of induction. Anne, good luck today, sorry to hear about your lack of sleep. I always think about you. Where did you get the Protein Power tapes? What is on them, inspiration or what? Here's something kind of funny that I read this morning, thought you might enjoy it- Age 8: A young girl looks at herself and sees a lovely Cinderella or Sleeping Beauty. Age 15: A young woman looks at herself and sees Cinderella, Sleeping Beauty, or mabe a Cheerleader. But if she is PMS-ing she sees a fat pimpled, UGLY person and yells, "Mom, I can't go to school looking like this!" Age 20: A young woman looks at herself and sees a person who is too fat/too thin, too short/too tall, too straight/too curly, but decides she's going anyway. Age 30: She looks at herself and sees a person who is too fat/too thin, too short/too tall, too straight/too curly, but decides she doesn't have time to fix it, so she's going anyway. Age 40: She looks at herself and sees a person who is too fat/too thin, too short/too tall, too straight/too curly, but says, "At least, I'm clean" and goes anyway. Nikki - you poor thing! Now you have me scared of menopause! :fr: Great little timeline, though - thanks :) Aleka - you'll definately want Dr. Atkins New Diet Revolution if you're wanting to try it. If you don't want to spend the money (it's about $7) you can go to www.atkins.com - it has everything you'll want to know. Anne - I got the flu shot a week ago and got sick on Sunday :) Blech! On the good side, I was out of commission for only one day while dh, who didn't get a shot, has been out of commission since Saturday. I'm starting a new supplement today called L-carnatine in the hopes that it will get me past my current stall. I'm not a patient person, so I get discouraged easily. My saving grace at the moment is that my size 7 jeans - which were very tight 2 weeks ago - are only a little too tight now. At least progress is happening somewhere! ;) |
Star, I don't think this is what everone goes through with menopause. I think my hormones are pretty screwed up. I've been having a time of it this past year with this change of life thing. I've always looked forward to this time in my life, thought it would be great. Maybe it will be eventually. I made a Drs appointment, just to make sure everything is ok. Can't get in til Dec 5th though.
What size do you want to be when you have reached your goal? I would love to be a 7. Actually, it would be too small for me. I have pictures of myself when I was an 8 and I looked too thin. But I'm around 5'9" or so on a good day. I tried carnitine awhile back and I couldn't tell if it did anything. I was taking a lot of other supplements at the time too, so who knows. I've read it does help some people. Like most things, people have different reactions to things. Nikki |

Maybe the stress you've been under could be a contributing factor too? :?: I am sooo glad I'm all through that and don't have to worry about it anymore. That's one of the good things about a hysterectomy;) :D The ages of a woman that you posted is so true. I'll buy a red hat too and join you! :lol:
ANNE, hope your day went well at work and that you weren't too tired. Our rain has stopped too, but like your area, it's a bit raw out. It's in the 50's today, but cloudy, and with the wind it feels much colder. StarPrincess, thank you for the atkins site. I will print out some pages and read it through. It will save me some money. What did you have for breakfast while on induction? I know the pancakes are a no-no, and I'm happy to see that you can have the french toast. I find that I can only eat eggs a few times a week, then I start feeling sick to my stomach :p That's why I'm a little hesitant to do Atkins. Any input would be helpful. Have a good afternoon. Bacon and sausage were my saving grace. And string cheese. How I love the sting cheese! I'm an unconventional eater anyway, so sometimes I'd have leftovers from the night before. One of the things I did when starting was eat about 6 times a day, then I could have smaller amounts of food. A typical day for me during the first two weeks would look something like this:
Breakfast - 3 sausage links (0 carbs) Slice of cheddar cheese (1 carb) Snack - 3 celery stalks with cream cheese (4 carbs) Lunch - Chef Salad w/blue cheese dressing (7 carbs) Snack - cucumber slices w/ranch (3 carbs) Dinner - Rotisserie chicken (0 carbs) Steamed cauliflower w/cheese (3 carbs) Snack - Flavored pork rinds (0 carbs) Total = 13 grams of carbs With the many "feedings", I was able to eat less and keep my carb levels down. It also kept me more than satisfied. Hope this helps :) |

Nikki, man oh man do I know where you are coming from with this bleeding business. Years ago I went to the doctor in tears because I was convinced I had cancer it was so bad. I was given an ultrasound etc. and was assured it was typical peri menopause symptoms made worse because of my twin pregnancy and the stretching that had gone on with my uterus. It is still enlarged, the doctor prescribed a drug called anaprox. It is fabulous. On the bright side, you and I are the same age and I use to be regular at 28 days since I was 12. I am now missing the odd cycle and I couldn't be more thrilled, lets hope the end is in sight for both of us:dizzy: I remember last year the stupid thing went on once for three weeks, like a tap. That only happened once thank God, but when I went on a menopause board I learned just how typical all this bleeding is. I couldn't beleive it!! Anne. |

It finally stopped raining and we did see the sun for about 5 seconds yesterday morning :sunny: then it clouded over and the wind started, so it felt raw. A typical Nov. day. It's supposed to get colder over the weekend.
Sunday DH & I are going down to visit my cousin. He'll go do his thing, then she & I will go shopping. Her b'day is towards the end of the month and this weekend is good for us to have a little celebration. ANNE, it is scary when heavy bleeding like that happens. It happened to me when I first got married. I had never bled like that before and it scared me. So, went to the Dr. and thankfully everything was ok, he told me I had some form of miscarriage. I don't think I was pregnant because it came right on time. I have no idea what it could have been.:?: It is so nice when it finally stops. I went into a forced menopause when I had a hysterectomy. It's total freedom!:cb: StarPrincess, thank you for posting a sample menu of what you eat. I am still thinking about it because I really do like my carb in the morning. The rest of the day is mostly protein & veggies. I sort of do Suzanne Somers WOE, where I have some fruit in the morning, on an empty stomach, then wait 20 min. and have some Shredded Wheat 'n' Bran w/skim milk. Lunch is usually a salad with f/f dressing. Dinner is some sort of meat with 2 kinds of veggies. The only thing I don't like about SS WOE is the food combining. I like the fact on Atkins you don't have to do that. I guess I have some thinking to do. You have been a great help. nikki, hope your bleeding has let up some. I will be thinking of you today. Aleka - I totally understand. There's so many different ways of going about this whole weight loss thing and we're all different, so no one way is going to work for all of us. I'm happy to answer any questions I can and give support no matter what. After all, it's not about the path we take, it's about supporting each other on the trip. I had an eye opening moment last night. My DH took a picture of me in my brand new coat that I'm so proud of. I put it next to a picture of me right before I started this woe and holy cow! When I look in the mirror, I don't see the difference, but looking at the pictures, I sure did. I was so excited, that I posted them on the Atkins thread (if you'd like to take a look). Good morning,
Well, I never did go. I figured I'd have to stop every 1/2 hour and DH understood. He drove down there went to the funeral and came home. It was a long day for him, he left at 330 am and got home at 1230am the next morning. He's glad he's home now, but he's pretty tired. I'm ok now, maybe it was stress and/or hormonal changes from menopause. Anne, I remember last year and wondered how things were going for you now. Thanks you guys for the emotional support. I got a lot done yesterday. I figured it would be better to stay busy, plus, there were all kinds of things I could do without DH supervising:D He is like I am, a perfectionist and bossy. He likes to tell me how to do a job better, and I'm the same with him. Maybe that's why we don't get much done:lol: I took out the caulking around the tub/shower and late last night, recaulked it, put plastic up on the rest of the windows, put a new phone jack in the wall and replastered around it and nailed on some trim. It was a productive day for me. Star, thanks for the sample menu. I've done Atkins before, once when it was brand new, 20 some years ago and then last year. But last year, I could only stay on induction for a week. I am going to give it another try this coming week and see how it goes. My goodness, you look fabulous. I have a picture of myself when I started to lose weight (274 lbs) taped on a full length mirror that I pass all the time. I want to always remember where I was and where I am. Still, a current picture is somehow even more revealing. You are an inspiration, thank you for posting your pictures. Take care, Nikki |
It is very chilly here this morning. We even had snow flurries which was more like a squall rather than flurries. We got a dusting, which quickly melted.
nikki, sorry you weren't able to make the trip, I wouldn't have wanted to go either if I had to stop that many times. It's times like that you need to be home. Glad that your DH made it to the funeral and back. That is a long drive and I hope he's getting plenty of rest. You sound like you were a busy little bee while he was gone. That's wonderful you can do those kinds of jobs, I honestly wouldn't know where to start. Of course if I did do anything like that, it would've been done wrong:s: I'm in the same boat as you with DH telling me how to do things. But, I don't do it to him. When he does that with me I get "thick", swear at him, walk away, and tell him to do it himself. :D MEN!!!! StarPrincess, I forgot to as you yesterday how long it took you to lose that much weight.
