breakfast ideas
 
Hi - have been trying to eat a "lower" carb menu but am having trouble with my breakfast. I have tried eggs, cheese, meat, yogurt. What does everyone else have?

Eggs and bacon or sausage are a favorite of mine. Or, I might have a couple of hard boiled eggs or some ham and cheese roll ups. Today I had pork rinds with cream cheese on top. You can basically have anything for breakfast, even leftovers from dinner last night. I'm not quite sure what your question is - are you asking for some sweet suggestions? Berries with cream is good too.

cottage cheese mixed with sweetner, walnuts and cinnamon....adding some sliced strawberries is yummy

mix 1/2 cottage cheese and 1/2 flavoured yogurt

or 3/4 cup Cottage cheese w/ 1/4 cup pineapple and 1/4 cup brown rice. Add about 1 1/2 tsp of splenda and you have a well balanced carb/protein breakfast. Yes it sounds strange, but its very tastey, like a pineapple dessert.

You didnt mention how "lower carb" your trying to get. Atkins low carb, or just lower than you have been eating.

Thanks for all your suggestions. I am just trying to eat lower than I was (not like Atkins though). But when I looked over my journals I was having way too many carbs at every meal.

I think if I eat more meat & veggies at lunch & supper I will be fine - leave the carbs for breakfast.

I use plain whole milk yogurt and drain it to make yogurt cheese. It has the consistency of cream cheese and use it for a spread on LC crackers, etc. I am lactose intolerant but can handle plain yogurt. I have tried the Blue Bunny Lite 85 yogurt too and added a couple tbsp of yogurt cheese to it to increase the fat content, along with some flaxmeal. I participate in a yogurt experiment in a thread at lowcarbfriends.com/century club. I read an article also on lowcarbluxury.com about yogurt, where the author feels the real carb value in 8 oz of plain whole milk yogurt is more like 4 carbs because nearly all the lactose is converted to lactic acid in the fermentation process. Could be why it doesn't bother my stomach and I don't get diarrhea from it. Sometimes I flavor it with davinci syrups, sometimes I add SF jello, or unsweetened koolaid w/ splenda or stevia, sometimes extracts and splenda. It is fun to experiment.

Here is something I picked off eDiets.com as well. Periodically, they do a Top 10 list of whatever the topic is. This is a top 10 list of low carb breakfasts.

1. Veggie omelet with turkey sausage
2. White fish salad, tuna salad or chicken salad
3. Smoked salmon with cream cheese
4. Turkey and cheese roll-ups or ham and cheese roll-ups
5. Grilled chicken breast on salad
6. Eggs with a couple of tomato slices or eggs and bacon
7. Cottage cheese or ricotta cheese with fresh fruit and a slice of low-carb bread
8. Fruit smoothie with tofu
9. Pancakes or waffles made from Atkins Bake Mix or other brands
10. Whole milk yogurt with Atkins Morning Start Cereal and fresh berries
